"The price of perfection is time," said Chef Amer Jamal in a gentle yet firm tone, as we fidgeted impatiently for the Kebabs to make an appearance. Suitably chastened, we reached for our sherbets and waited for Riwayat to unfold.

Riwayat at Dum Pukht Begum's, ITC Kohenur is an ode to forgotten Mughal flavours and royal travel dining. The menu is centered around kebabs and breads. It nudges you to linger over a drink and savour kebabs that have quietly survived dynasties, migrations and changing palates.

The Zareen Du Kebab, delicately scented with saffron and clove, is regal without being overpowering. Vegetarians are treated with equal reverence; the Nadru Shikampur and Kathal Ghilafi Seekh are wonderfully nuanced.

And then, comes the Naan- Gil-e-Firdaus —A decadent, oven baked, flat bread infused with saffron and cardamom, fortified with nuts and raisins, served glazed with ghee and a hint of rose water; a close cousin of Brioche in texture. The sort of bread that makes you momentarily abandon your table manners and reach for "just one more piece." At Riwayat, luxury isn't loud. It is patient, fragrant and deliciously timeless.
