Chefs Kelly Whitaker (@ie_kelly) and Taylor Stark (@taylor_stark2300) are extending the experience of their two Michelin Star restaurant, The Wolf’s Tailor, with new, limited time offshoot called SHEEP (@sheep_twt). For the next three months, the concept will reside in the rooftop space of the Clayton Hotel and Member’s Club (@claytondenver). Their award-winning food, which interweaves sustainable practices into fine dining dishes, is complimented by big views of Cherry Creek from nearly every seat in the house and living moss forest installations from @ie_erika spread around the restaurant.

Whitaker and Stark developed a menu around making the most of Colorado’s summer produce season. The 4 course prix fixe menu, that’s also available for weekend lunch, runs $95/pp — a fraction of the cost of a meal at Wolf’s (@thewolfstailor). An optional $55 beverage pairing is available, curated by ID Est’s wine and sake expert, Caroline Clark (@ie_caroline). Thematically, the menu is centered around the lifecycle of fire — with smoke, flame, ember, and ash courses.

If I have one recommendation, it’s for at least one person at your table to order the tomato dish, which has a family of miniature nightshades floating in tomato water and topped with smoked tomato gelée that looks as lovely as it tastes.

Reservations are already hard to come by through the next month and half, but the pop-up runs through Oct 4, 2026, so there’s still time to catch this special experience, which is open to the public, club members, and hotel guests to book.

Disclosure: My meal was hosted. The restaurant has no influence over my coverage, which remains independent.
