The second course, “departure”, marks a first step forward into the unknown. Structurally based off of a margarita, this combines some of our favorite flavors with @brucatospirits and @tximistavermouth and garnished with a pair of skewered sangria cubes. For us, this drink embodies the point of no return, halfway between home base and unexplored territory. You open the door and step through - this just might be an exciting period of new growth, or a new perspective that reframes everything you once knew. Have you ever navigated a choice between the familiar and the unknown?

The HORIZONS journey begins with "sanctuary" - an earl grey sour comprised of earl grey infused soju, lemon, agave, and black lemon bitters. As the first of five courses, this drink serves as a comfortable "sanctuary" to introduce the night, and a treat for new and old guests alike.

As a forever plamps classic, I felt this was especially fitting for this story about leaving our comfort zone and challenging our limits. Having poured countless servings of earl grey sour over the years, I couldn't help but look back and celebrate the drink that started everything just one more time. -steph
