This job will take you across the country. You’ll watch the landscape change through the truck windshield. You’ll meet farmers, ranchers, winemakers, guests, and teammates who will eventually feel like family.

It’s beautiful. And it’s messy. It’s long days, heavy lifting, dust, weather, tight timelines, creative problem solving, and figuring things out on your own. What you see on Instagram is the candlelight. What you don’t see is the hustle that makes it glow.

We’re seeking hard-working applicants with a real sense of adventure, strong hospitality skills, and the stamina to do demanding, meaningful, and sometimes wacky work.

Each of these roles requires full-time travel (living out of a suitcase) from June through November. Accommodations are provided.

This Savory Squash Tart, courtesy of @soterwines, is not to be missed this fall. Cozy, golden, and perfect with Willamette Valley Chardonnay!

INGREDIENTS
Dough:
1 1/2 cup AP flour plus more for rolling out dough
4 ounces ice-cold butter, cubed
1 tsp Kosher salt
1/4 cup Ice water
1 Egg yolk for egg wash

Filling:
1 Tbsp butter plus 1 T olive oil
1 Medium butternut squash or similar
1 1/2 Large onion, sliced
6 Cloves garlic, minced
2 tsp Finely chopped thyme
4 Ounces crème fraîche
1/2 Cup walnuts, chopped
Salt and pepper to taste

Finish:
4 ounces butter
2-3 ounces comté cheese

INSTRUCTIONS
In a food processor, combine flours and salt. With the motor running, add cubed, ice-cold butter and pulse until incorporated—don’t overwork. Slowly drizzle in ice water until just combined, adding more only if needed. Turn out onto a work surface, form into a disk, wrap, and refrigerate at least 2 hours or overnight. Dough can be frozen after resting.

In a sauté pan, melt butter and olive oil. Cook onions and garlic over medium-low heat until caramelized, scraping up browned bits, and seasoning well with salt and pepper. Cool completely, then stir in cold crème fraîche and refrigerate.

Peel, seed, and slice squash into 1/8-inch pieces. Optional: roast cleaned seeds with olive oil and salt at 200°F until browned.

Let dough rest at room temp 20 minutes. Roll to 1/8-inch thick circle, fitting a parchment-lined baking sheet. Chill again if dough becomes soft. Preheat oven to 400°F. Spread onion mixture on dough, leaving 1/2-inch border. Toss squash with salt, pepper, and thyme; layer over onions, slightly overlapping. Fold edges over filling, overlapping sections to form a crust. Brush with egg wash and sprinkle with sea salt. Bake 45–60 minutes, rotating halfway, until golden.

While tart bakes, cook butter over low-medium heat until milk solids brown, about 10 minutes. Add walnuts, remove from heat, then strain before serving.

Cool tart slightly. Top with fresh thyme leaves, brown butter walnuts, and shaved Comté. Serve warm or at room temperature.
