Yesterday's Oyster 101 & Tasting at @the_yacht_club_nyc with @violaoysterco @strongbuzz_ and @c___r___e___w team was spectacular!

I love sparking people's interest and imaginations about what oysters are and could be. We did a little of everything: discussed oyster anatomy, flavor expressions, eating etiquette, sustainability & production, and more. This was shared in tandem with nicely shucked flights of:

1) Sailor Baby from Southampton, NY
2) Noank from Mystic, CT
3) Montauk Pearl from Napeague Bay, NY
4) Montauk "Wild" from the same grower
5) Red Label Cocktail from Cascumpec Bay, PEI
6) Hammersley from Hammersley Inlet, WA

It was fun to compare and contrast cage and surface-grown oysters with bottom-cultured ones, Atlantic oysters vs. Pacific (the group was divided on which they prefer). Then the whole thing was enhanced by one of the most breathtaking sunsets of the year.

If you're interested in hosting an Oyster Appreciation experience for your team or organization, I'm open to chatting! Next availability is mid to late Dec -- holiday experience anyone?

Join us on January 21st for a lovely afternoon filled with oyster tastings, education & topped off with a 4 course Sunday dinner inspired by this special bivalve. The impressive Julie Qiu (@inahalfshellist) will be joining us for the day and delving deep into the nuances of oyster tasting & shucking, and discussing how terroir & merroir influence an oyster’s flavor & development. Our friends from @ungraftedselections will be pouring wine to match, while Chef @emilymni prepares a 4 course Sunday dinner to cap off the day. Link in bio for tickets - you won’t want to miss this! 🦪 #FHOC #nhv #gscia #seafood #rawbar #oysters

Introducing the all-new OMG Oyster Tasting Wheel, a comprehensive sensory tool that guides you from an oyster's appearance to the aftertaste.

We covered how to taste oysters and develop your palate in yesterday's first class of Level 2 Advanced Oyster Appreciation, and will be sharing more ideas and facts about oyster sensory sciences in the future.

On Friday morning last we were delighted to host a meet and greet party on the pier at the oyster farm to get the 2023 #oysterfestival weekend started. This is always a wonderful opportunity to welcome the oyster shuckers from around the world and give them some practice on the flat native oysters that they will be opening at the world opening competition. The shuckers also helped out on Friday night to get familiar with these sometimes challenging #oysters
.

Oysters galore! Spent the weekend in Boston celebrating a close friend’s graduation from Harvard Endo!! Of course, I stayed in Seaport (🤪) & had oysters from three restaurants!! My dear friend Morgan got me this Oyster rating book from @inahalfshellblog. I’m so excited to put this book to use and have a *real* rating system! 😍 Let’s go… What’s your favorite oyster?

Masterclass Oyster & Sake Pairing by Julie Qiu ( @inahalfshellblog ) & Matijn Wijn

Thanks everyone for coming! It was really interesting to find out which oysters and which sake paired the best with eachother. Oystershuckers Taha & Lars made sure there were plenty of oysters for the guests, presented on our finest French oysterplates 🦪💗
