Join The Independent Coffee Lab How do you approach a new green coffee on the Rubasse NIR roaster? We’ll start with a 250g sample and look at how green coffee data can help guide your first roasting decisions. From there, we’ll establish a reference roast, then look at what we might adjust, why we’d make those changes, and how they affect the final cup. We’ll be working with 3 different coffees, comparing their readings and looking at how to apply that information when building a roast profile. We’ll then make selected adjustments to the reference roast and taste the results together, helping connect the green coffee, the decisions made during roasting and the final sensory result. We’ll also include an introduction to the Rubasse NIR roasting system, so the workshop is suitable for all experience levels. Coffee from Indochina and Khipu. #roast #workshop #education #greencoffee

Still recovering from the caffeine madness last week! A week filled of coffee festivals, cuppings and tastings. @londoncoffeefestival was overwhelming in the best way. @bloomtownfestival quite then opposite- smaller, more personal! The kind of place where you could have a real conversation about why coffee tastes the way it does. A complete different energy, something I needed after the madness of LCF. Some ammaaazinng coffees were tried! Huge shoutout to @batchbabycoffee and @coborn.coffee for making this happen! Did a cupping with @indochinacoffee which was quite interesting - tried a coffee from a farm in BR Hills, Bengaluru! You could imagine my excitement ✨ I told myself I’d be sensible in buying coffee, but after missing out on buying some at LCF, I wasn’t going to do that again - which means coffee is sorted for a while 😉 Even after all tha caffeine did not miss out on Guinness cold brew @batchbabycoffee Too much coffee, zero regrets!

2 weeks to go! London Coffee Festival is approaching fast. After such a strong Friday last year, we’re switching things up and hosting Cup The World across Thursday and Friday. This year, there are two rooms: One for scheduled cuppings, and one open space with all of us. More on the schedule soon.

Recipe in the caption 😊 We are BIG on filter coffee. Whether we are behind the bar at our shop or testing batches at the roastery, a filter coffee is our go-to 💧 We often get asked how to do this at home, so our fab videographer Jonny from @goyaprod came over, and captured the process. For this recipe, we used: 15g of medium/coarse coffee - this one, our Strawberry Roan from China 🇨🇳 250g of filtered water at 90c using our @fellowproducts kettle ⚡️ Our brewer of choice for the last few years has been the outstanding @origami_coffee.jp 🇯🇵 We poured 3x individual and equal pours of 60g with a final pour of 70g ⚖️ The final brew time was just over 3:30 and the final cup was bright, sweet with notes reminiscent of strawberry jam and honey 🍓🍯🌼 Do you brew filter coffee? Honoured to be named the UK Roasting Champion this year. There’s been a lot happening behind the scenes, balancing work, preparation, and everything in between so I’m very grateful for the opportunity to stand alongside such a strong field of competitors. Thank you to everyone who joined us at Formative for our Chinese New Year coffee cupping last week. It was a pleasure to share a table celebrating some brilliant coffees from across China. Massive shout-out to @indochinacoffee / @calico_coffee_uk / @yundiancoffee / @killbean.roaster / @panda_bear_xcp and of course our incredible cafe team. The room was full of thoughtful conversation, curiosity and a genuine interest in the evolving story of Chinese coffee. We had a great time hosting this one.
