Today we will make Feta cheese and sweet figs wrapped and baked in fig leaves. For the recipe go to direct link in bio.
Did you know that fig leaves have so many wonderful culinary uses? They are perfect for wrapping a variety of foods for baking (al cartoccio), and they can also be used to make tea, infuse desserts like panna cotta or ice cream, as they add a delicate aroma with subtle notes of vanilla and coconut to all kinds of dishes.
Today, we will wrap a beautiful slab of feta cheese accompanied by sweet fresh figs, fragrant herbs, and a generous drizzle of honey. We happen to be lucky enough to have a fig tree in our garden, but if you don’t, ask a friend or neighbor for some tender leaves and a few sweet, ripe figs. Make sure to try this recipe as it is a delicious appetizer for any occasion!

BIETOLE or Swiss chards must be one of our favorite green side dishes. So easy to prepare when they are in season and incredibly versatile. Preparing them in the pan rather than boiling them first allows you to retain all the flavors and the nutrients. The addition of 1 or 2 fillets of acciughe or anchovies elevates the symphony of flavors to a whole new level. Trust us, even if you normally don’t like anchovies you will be surprised as to the delicious depth of flavor this will create. Not only is it a perfect side dish, but it is also mouthwatering delicious tossed with pasta or placed on a crunchy slice of bread drizzled with olive oil.

Just like spinach BIETOLE will wilt and almost disappear in the pan so make sure to be generous with the amount you prepare.

RECIPE
- 2 large bunches of fresh Swiss chards
- 2 cloves of garlic
- cayenne pepper
- 1-2 anchovy fillets
- olive oil for the pan as well as to drizzle on the finished dish
- juice of a lemon

Hope you will try these Swiss Chards, and make sure to let us know if you make this delicious side dish and tag us with #insideourkitchen @inside.our.kitchen

BUON APPETITO!

On the menu we will have chicken breast accompanied by cherry tomatoes and fresh herbs from the garden.
What a treat and joy it is when she comes over and we get to prepare food with this full of life little sidekick.
Four years of age is a perfect time to be in the kitchen as she learns to cook with her parents at home, as well as with her Pops and Nonna.
It is such a joy to instill in children at a young age the sacred privilege to sit around the kitchen table sharing simple food, life and community. Following is the simple and very flavorful recipe.

Recipe:
3 chicken breasts - or more if needed
1 cup cherry tomatoes
1 sprig Rosemary
6-8 garlic cloves with skin on
Sage leaves
Salt
Olive oil

- heat the pan and drizzle olive oil
- carefully place chicken breast in the hot pan. Be aware that it may splatter
- add the herbs and the garlic
- season with salt
- cover parti alla with a lid so it will not splatter everywhere
- only turn chicken when it does not stick
- now add the tomatoes and season with salt
- cover once again
- you may need to add a little water to deglaze the pan. Allow the sauce to reduce a bit and drizzle over the chicken. The reduction is incredibly delicious. The garlic will soften up and transform into a delicious, soft, flavorful and spreadable paste. Trust me!!! So delicious!
Enjoy!
Let us know below if you will make this recipe.
Happy cooking and BUON APPETITO!!!

Making a Star Pizza with our little sidekick was such a joy.
She always makes us laugh with her expressions. While rolling the dough out she says “I’ll make it as flat as pie”
Love to watch her enthusiasm in the kitchen and her desire to learn and get to work. Children are eager to help and to discover. Allowing them to get dirty in the kitchen and experimenting and introducing them to many ingredients, scents and flavors, will make their life so much richer and allow them to appreciate all types of food.
She always makes us belly laugh with her funny expressions.

While baking the pizza she noticed the moon in the sky and decided that it was totally appropriate to howl like a wolf. 😂😂😂 It definitely rocks being grandparents!

Spaghetti alla Chitarra is what we could not resist to make with the Pasta all’Uovo we made yesterday. (Check out yesterday’s reel with our little sidekick.)
Normally spaghetti alla chitarra are made with semolina flour and no eggs but pasta all’uovo is what we had on hand.
Spaghetti alla chitarra is a typical dish from an Italian region named Abruzzo. The name “chitarra” derives from the strings resembling a guitar. My little sidekick and I could simply not wait, and immediately had to try our beautiful tool that had just been delivered by the postman. So here we go:

- 300 grams 00 flour or All purpose flour
- 3 eggs and half an eggshell of water
Work the dough thoroughly, cover with plastic wrap or a bowl, and allow to rest for at least 1/2 hour before stretching it.
