This NAIDOC Week, we’re asking you to walk with us. ❤️💛🖤

NAIDOC Week is a time of celebration. A time to honour the strength, resilience and enduring cultures of First Nations peoples. It’s also a time for our allies and the wider community to listen, learn and take meaningful action.

Across Australia this week there is so much generosity, care and hard work happening in our communities. If you’ve ever wondered how you can make a genuine difference, this is one way.

The Bundjalung Bush Food Alliance and @the_returning_ has found its new home at @consciousground , where together we’re creating a community-led native nursery that will grow far more than plants. Local solutions community lead and that’s why we are set up for success.

This nursery will help regenerate Country, protect culturally significant native food species, strengthen Indigenous knowledge, create education opportunities, support future generations and build a more resilient native food system grounded in culture and community.

Thanks to the incredible support of the Ma Earth Foundation, every dollar donated will be matched, doubling your impact.

Your contribution goes directly towards establishing the nursery—purchasing infrastructure, propagation equipment, growing native plants and creating a place where culture, community and Country can thrive together.

If you’ve ever enjoyed native Australian ingredients, learnt from First Nations knowledge or simply believe in a future where culture and biodiversity flourish together, we’d be deeply grateful for your support.

Every donation matters. Every share helps. Every person who stands beside us strengthens this vision.

Together, let’s grow something that will continue giving back to Country and community for generations to come.

Some partnerships are built around a shared passion for food and the stories it carries. 🌿

It was wonderful to spend time with Katerina @allthings_cultured , whose love of fermented foods has connected us over the years.

One of the things that brings us together is a shared philosophy of using everything. What many now call "zero waste" wasn't a concept we learned later. As Katerina reflected, it was simply part of what we did with food.

Whether it's growing produce, creating ferments, or cooking a meal, there's value in every part of the harvest. It's a way of working that honours the resources we've been given and encourages creativity through the seasons.

This season, our mandarins, oranges, grapefruit and kumquats will become some new and exciting ferments Katerina is bringing to the community. We're so excited!

When growers and makers work closely together, seasonal abundance takes on a whole new life.

The strongest food systems are built on relationships, shared values, and a willingness to see possibility in every harvest.

Thank you, Katerina, for sharing your passion, creativity, and love of food with our community. 🍽️

We're not just growing food, we're growing people.

ABORIGINAL LAND HOLDERS GATHERING ❤️💛🖤

Thanks to @LLSNSW two days on Country surrounded by community, knowledge and connection and a HUGE Thank you @msmindywoods @karkalla for hosting, sharing and connection. We are so grateful to stand, learn and walk together with you.

Aboriginal landholders from Bundjalung, Yaegl, Gumbaynggirr, Dunghutti and Birpai Nations came together to share knowledge on regenerating Country, protecting seeds, establishing native nurseries and creating opportunities through native foods and cultural enterprise. Each story was different, yet all were connected by a deep responsibility to Country and to future generations.

At @consciousground, May @intuitivefooddesign, Richard and our team shared our vision for what farming can become when Country sits at the centre.

Food it our tool,
People are our Purpose,
Nature is our Teacher.

Our desire to demonstrate that agriculture can be a vehicle for healing — restoring landscapes, strengthening community, creating livelihoods and reconnecting people to food, culture and place. Through care for Country, a farm can grow much more than produce. It can grow people, opportunities, relationships and a sense of belonging.

Walking through the food forest and paddocks , sharing our story and witnessing the work of our team over the years offered a powerful reminder that regeneration is not simply about soil health or farming practices. It is about people. It is about community. It is about our responsibility to leave Country stronger for the generations that follow.

When we care for Country, we also grow culture, connection and hope.

Walking together on Country creates a different kind of conversation. It allows us to listen more deeply, learn from one another and understand that healthy landscapes and healthy communities go hand in hand.

Above all, these two days were about connection — connection to Country, connection to community and connection to each other.

Because when we gather, share and walk together, we strengthen the relationships that will carry this work forward. Nguliboo muggi- all of us strong.

Comment *WASTE* if you want to learn how to turn one ingredient into multiple ferments with no waste, and I'll send you my free Zero Waste Fermentation Class.

**Ferment #3 of Citrus Week.**

For this one, I paired kumquats with local honey and native herbs and let fermentation do the rest.

This is the kind of ingredient that can transform a bowl of yoghurt, a cheeseboard, roast duck, a steak, or even a simple piece of avocado on toast.

Kumquats are one of the most fascinating citrus fruits. Unlike most citrus, their peel is sweet and their flesh is tart, making them perfect for fermentation.

Follow along as we continue exploring the many shades of citrus through fermentation.

Still coming this week:

Orange Peel Miso
Green Grapefruit Kimchi
And more citrus experiments

Special thank you to @intuitivefooddesign
And her team at @consciousground for a beautiful citrus they grow!

If you haven't read it yet, check out this week's article:

**Can You Even Ferment Citrus?**

All Citrus Week recipes will be published on Monday in the *Every Bit Counts* section on Substack.
