POSTS STORIES REELS TAGGED

Hi Tamarind & Thyme Family,

Chef Damone here.

Before anything else, I want to say thank you. Whether you’ve visited the truck, booked us for an event, shared our posts, or recommended us to friends and family, you’ve played a part in helping Tamarind & Thyme become what it is today. Your support has meant more than you know, and I am truly grateful.

Over the past 6 months, we’ve experienced some unforeseen technical challenges that have made it difficult to provide the consistency and reliability that you deserve in our service days and hours. At the same time, I’ve been navigating one of the biggest transitions of my life. After the end of my marriage, I relocated to New York to begin a new chapter. While these changes have been deeply personal, they’ve also given me the opportunity to reflect on how I want to build this business moving forward.

One thing has never changed: my commitment to excellence. At Tamarind & Thyme, we believe every meal, every interaction, and every event should reflect the highest standard of quality and hospitality. Rather than operating below that standard, I’ve made the decision to intentionally step away from regular food truck service. During this time, we’ll be making necessary repairs to the truck, strengthening our operations, and positioning Tamarind & Thyme for long-term success.

Sometimes the strongest thing you can do for your business is pause, rebuild, and return stronger than before.

This is not the end of Tamarind & Thyme. It’s the beginning of its next chapter.

While the truck is taking a temporary pause, @islandinfusionscatering remains fully operational. We are actively accepting catering, private chef experiences, corporate events, weddings, festivals, and special event bookings. If you have an upcoming event, we’d be honored to be part of it.

There are exciting things ahead, and I truly believe our best days are still to come. Thank you for your patience, your grace, and for continuing to believe in my vision. I look forward to sharing what’s next and serving you again soon.

With gratitude,

Chef Damone

Thyme isn’t just another ingredient for us — it’s part of the story. Part of the flavor. Part of the reason we’re Tamarind & Thyme.

This tiny herb carries big Caribbean energy: warm, earthy, aromatic, and the secret to that “mmhmm, oh yeah” flavor you taste in so many of our dishes. It’s the quiet MVP of Caribbean cooking — subtle, warm, and the reason our dishes taste like home, a small leaf with a whole legacy.

Tamarind brings the tang. Thyme brings the soul.

Back with our second Island Eats & Beats, and this one is for the yardies who’ve made the U.K. their home.

Forget everything you know about fish & chips — ours pulled up with full Caribbean attitude.
Crispy, golden fish topped with tangy veggies, our exciting custom remoulade, and a little island heat that makes your taste buds wake up and pay attention.
Paired with perfectly seasoned fries, it’s giving British classic meets Jamaican flair, and honestly… they’re a perfect match.
It’s bright, bold, a lil’ spicy, and a whole vibe on a plate.
London could never 😎🇯🇲

Head over to the link in our bio to vibe while you eat and let us know what song the playlist is missing.

Good food feeds people. But great community feeds each other. ❤️🍽️

We caught up with our founder to share the heart behind our Pay It Forward program — the meals we’ve already served, the stories that keep us going, and the big goals we’re building toward in 2026 and beyond.

When you invest in our Pay It Forward Program, you’re not just buying a meal. You’re spreading hope. You’re making someone’s day a little brighter. Thank you for helping us build something bigger than food.

If you don’t have your own personal Tamarind & Thyme meal playlist — don’t worry, we got you covered! Introducing Island Eats & Beats because every good dish deserves a vibe to go with it.

Starting off with a crowd favorite… We took Philly’s most iconic sandwich and gave it some serious island soul. 🇯🇲 Smoky jerk spice. Melted cheese. Toasted roll. Every bite hits with that perfect mix of heat, flavor, and cool Caribbean confidence. It’s the best of both worlds — comfort food meets vacation mode. 😋🌴 And now you have the beats to match. Link in our bio to vibe while you eat.

What song would you add to the Jerk Chicken Cheesesteak playlist? 🤔

Hey yall. Chef Damone here! 👋🏾

This is the season of giving and gratitude, and I have a huge ask of you everyone who has enjoyed my food.

Jamaica is the reason I am who I am today. 🇯🇲

In the wake of Hurricane Melissa, many of our brothers and sisters in Jamaica are facing tremendous hardship and loss. It is incredibly sad for me to see the physical damage that the storm has had on the country. And while Jamaicans are some of the strongest, most resilient people I know, I also acknowledge the pain I see in people’s eyes. I see concern about the future. And I want to help address it.

As part of our mission to serve, and to do our part to assist our home country, we’re opening our truck and our hearts to collect non-perishable food and clothing donations to send directly to families in need back home on the island. 💛💚🖤

From now through the next few weeks, drop off items at the Tamarind & Thyme food truck no matter which location we are at. Every can, every item of clothing, every gesture helps rebuild hope for an island that is truly in need at this time.

This isn’t just about giving… it’s about standing together as human beings to make sure we do our part to help.

Let’s feed the spirit of Jamaica — one donation at a time.

I appreciate everyone for their help in advance. It means the world to me and to everyone on the island.
