This 15-min easy recipe is @itshelenmelon 's take on Chungyungchae Bokkeum (Korean-style stir-fried bok choy)!
It’s glossy and delicious due to the addition of Lee Kum Kee's Premoum Oyster Sauce, which makes for a thicker sauce, deeper flavor and extra umami!

INGREDIENTS & MEASUREMENTS:
— 300g bok choy (once leaves separated)
— 2 tbsp neutral oil (for stir frying only)
— 3 to 5 garlic cloves, minced
— 1 tsp soy sauce
— 1.5 to 2 tsp Lee Kum Kee premium oyster sauce
— 1 tsp sesame oil
— 1 tsp gochugaru (Korean red chili flakes)

My Gollum is missing an arm.😬

I read Katabasis by @kuangrf because I liked Babel and because the Hardback Life @booksonthebosque book club read it in March. This book follows two graduate students as they navigate hell in search of a recently deceased professor. I liked Babel better, I think, but this was interesting. I’m glad I read it.

Randomly, these characters ate Lembas bread as they traveled. I had to pause when it was first mentioned and google it to see if it existed outside of Lord of the Rings. It doesn’t.

While scrolling last week, I came across a reel from @itshelenmelon with a recipe for Lembas, and decided to give it a try. It was easy enough to make, and my kids really liked it. It fueled them at the park today. They eat portions as the hobbits do and not as the elves recommend.

🧌Which do you prefer—Legos or Lord of the Rings?

Hey friends! I tried out @itshelenmelon’s butter mochi recipe and it was sooo good!!! 😍

Crispy on the outside, with soft and chewy mochi on the inside. You guys should seriously give it a go!

I tweaked the recipe a little by adding a bit more sugar. I was going to make a condensed milk dipping sauce, but I didn’t end up making it because the butter mochi on its own was absolutely delicious!

BUTTER MOCHI

Ingredients

* 160g glutinous rice flour
* 1/3 cup white sugar (I added a little extra)
* 200ml whole milk, room temperature
* 30g unsalted butter, room temperature
* 1 egg, room temperature
* 1 tsp vanilla extract
* 1/2 tsp salt

Method

1. Preheat your oven to 185°C.
2. In a saucepan over low heat, combine the milk and butter, stirring until the butter has melted. Set aside to cool slightly.
3. In a separate bowl, whisk together the egg, vanilla extract, sugar, and salt until well combined.
4. Pour the milk and butter mixture into the egg mixture and whisk until combined.
5. Add the glutinous rice flour and mix until the batter is smooth and free of lumps.
6. Generously butter a muffin tin, then fill each cup with the batter.
7. Bake for 30 minutes, or until the tops are golden and crispy.
8. Let the mochi cool completely before removing them from the tin.

Enjoy, friends! 🫶 @itshelenmelon #wellingtonnz #buttermochi #viralrecipe #dessert #foodie

This recipe was inspired by @itshelenmelon Korean-style soy garlic noodles 🍜

For the sauce, combine the following ingredients:

- Soy sauce
- Sesame oil
- Minced garlic
- Gochugaru (Korean red pepper flakes)
- Veg oyster sauce
- Sugar
- Chopped green onions

Adjust to your taste, pour over your choice of noodles, add toppings of your choice, and enjoy! 💚
