This June, Jamal Mhlanga, known to the team as MJ, will travel to Le Calabash in the Loire Valley for an intensive two month, fully sponsored, culinary internship with chefs Sidney and Alison Bond. MJ will spend his time immersed in French cuisine, market culture, fresh produce, classical technique and the rhythm of cooking in one of the world’s most celebrated food destinations.

The Test Kitchen Fledgelings has always been about recognising potential and then giving that potential a real chance to grow. MJ is eager, positive and willing to learn and an experience like this can shift the course of a young chef’s life. Sidney and Alison are not just offering training, they are opening a door to a much bigger world of food, culture and possibility.
