I want Worry Not to be a creative play space for chefs to craft whatever menu excites them. My only ask is that they cook some kind of hotcake. Cuz damn if I don’t love a hotcake. May I present @jahmichael__ s “Horchata ricotta pancake”

Chef Jahmichael says of the dish, “When you first asked me to make pancakes I was like, shoot, how am I gonna make pancakes cute and Mexican? In my experience, ricotta pancakes make the fluffiest bois, so my mind immediately went there, but I wanted a sweet component. Horchata is mostly milk, so I thought why not try to turn that into ricotta. Several attempts later I figured out how to incorporate the flavors of horchata into a ricotta…and naturally, horchata chantilly to top it off. “

Whereas Huevos rancheros is a dish that piles all ingredients together in a one-pan recipe like one happy family; Huevos divorciados takes the opposite approach by preparing key components separately and deliberately plating them with clear lines of demarcation. It's an amicable divorce of flavors where two fried eggs and tortillas are the common bond.

Chef @jahmichael__ says of the dish “Huevos divorciados are such a classic Mexican breakfast dish, every mom and pop joint has them on their menu cause nobody is ever satisfied with just one kind of salsa. Gotta mix it up and get the full fruits of the garden.”

Not only is carne de puerco con chile verde (pork shoulder braised in salsa verde)
✨incredibly✨ delicious, there’s a sweet & sentimental reason it’s on the menu for our August 13th brunch event. Chef @jahmichael__ shares how this classic Mexican dish was his inspiration to become a chef, and why it had to be featured on the first Worry Not! brunch pop-up menu:

His great grandmother loved to host & cook meals for the entire family growing up. One day, Jahmichael asked if he could step in - he wanted to feed the family dinner that night, and decided to make carne de puerco con chile verde.

“My great grandma said I got a 10/10.” He notes that she wasn’t the type of person to say things just to be nice, “she meant what she said.”

She went on to tell Jahmichael that he was meant to cook Mexican food in the United States, to show people “what ‘real Mexican food’ is like.”

“And that moment was my inspiration to become a cook.”

Chilaquiles date back centuries to early Aztec culture and can be found on the breakfast table in many Mexican households.

@jahmichael__ has crafted his with crisp totopos, fresh house made salsa and cotija cheese. He’ll even let you add a baked egg if you’re feeling wild.

The menu. @jahmichael__ s take on “cute Mexican brunch”. Some smaller plates on the first page followed by some heartier options on the second. We have options for many dietary restrictions as we’ve aimed for the food menu to be as inclusive as our drink menu will be.

Please follow and share as well as make a reservation for our inaugural event Aug 13th! Reservation link in bio.

We’re over the moon to introduce Worry Not!’s first chef in our pop-up event series, Chef Jahmichael Knutson. Jahmichael has been working hard on what he’s coined as “a cute take on Mexican brunch” to pair with our unique & flavorful no-proof cocktail menu.

Jahmichael is also passionate about our mission of cultivating an alcohol-free community drinking & dining experience. When asked what brought him to work with Worry Not!: “I support the motivation behind zero-proof cocktails. It’s good for people. It (not drinking) can be hard, and I support the community of non-drinkers.”

His culinary journey began early hovering over pots and cutting boards with his Nona and mother in the family kitchen, "I got my chops stirring the rice at my great-grandma's house and grating cheese for my mom in our kitchen growing up. Shoutout to my Nona!"

From there he launched into his restaurant career, starting as a dishwasher as many great chefs have done. After making his way out of the dishpit, he leaned into cooking, working with live fire slinging birds with his friends at Chicken and Guns.

Jahmichael then joined the opening crew of Jacqueline in SE - famous for their oyster bar - in 2016. Under head chef Derek Hanson and then chef de cuisine Joel Lui-Kwan, he made his way from prep cook, to line cook, to sous-chef. "I learned everything I know about professional cooking under Derek and Joel."

When speaking to his thoughtfully created menu for the August 13 debut, he said, "The food for this iteration of Worry Not! represents the marriage of my Mexican cooking roots and my professional cooking career here in Portland." The menu proudly features a Mexican breakfast staple, "Huevos Divorciados" - a take on huevos rancheros featuring both red and green salsa divided - or 'divorced' - by refried pinto beans.

Worry Not!'s first pop-up brunch is coming in exactly a month, we can't wait to see you there! August 13th at CH Northeast. Reservations available soon. Please like & share!

It’s cold & raining, but we made a crudo of yellowtail with avocado, so much citrus, tepache, tajín & blanco tequila. It tastes like summer. It’s helping us get through the night.
