Miso Butter Leek & Corn Hash with Scallops

Sometimes ideas for recipes come from necessity. Specifically, the necessity of cleaning out my fridge. While my initial idea was always corn-focused, I only added leeks when looking at my fridge and realizing they had been sitting there for a solid week. As part of the allium family, I decided to give it a go and use it in place of the shallots/onions I had originally conceptualized as part of the dish.

Midway through the small of caramelizing leeks and I knew I made the right choice. The combination of leeks and corns is slightly unusual and creates a sort of hash that has all sorts of complexity going on- buttery, salty, and sweet.

This is a classic example of why I enjoy being part of a CSA (community-supported agriculture- see my post if you haven’t heard of it before). Sometimes you get something that you either don't normally cook with or maybe occasionally eat, but not a whole lot. For me, leeks didn't seem that seasonal in the summer. But it came in the box. So I tried it out. And clearly didn't regret it.

Amaranth Greens

One of my favorite things about farmers’ markets is finding new produce. In particular, I often stumble upon different varieties of greens I’ve never seen before, like these stunning amaranth greens from @texasfarmersmarket . Just look at the reddish-purple hue!

While sometimes I’ll experiment with new recipes, the most often way I prepare these types of greens is by sautéing them in a generous amount of olive oil and garlic (and kosher salt). This method works for almost all greens, no matter what type. The cooking time varies depending on how hearty and tough the green is, but all will become tender with enough time.
