The UK final of the @flaguerie_calvados Cocktail Competition. Bartenders from across the country competing with one brief: create a cocktail inspired by the bar you call home, built around Domaine de La Flaguerie’s organic Calvados.

A family estate in Normandy’s Bessin region, farming organic apples for over a century and producing some of the most expressive Calvados coming into the UK right now. This final was proof that the category has serious legs in London’s cocktail scene.

The Market Trader

40ml @flaguerie_calvados 6 Year
35ml Clarified Lacto-Fermented Apple & Chamomile
7.5ml Suze
Force Carbonated
Elderflower Mist

Markets are all about traders from different backgrounds coming together to share techniques, produce, and culture, and our bar is no different. Nestled in the heart of Spitalfields Market, I’ve tried to encapsulate the feeling of a classic summer’s market day, with traders, guests, tourists, flowers, and fresh produce at every turn.

I chose the 6 Year Calvados for its drier, more oaky character compared to the younger 2 Year expression. The apples are lacto-fermented to reflect the preserves that fill the market stalls, while also extending their life to reduce waste. The process adds acidity, complexity, and depth to the fruit, complementing the apple character already present in the Calvados.

Super dry, yet bright, fizzy, floral, and smashable.

Drink responsibly.

How do you take one of the most iconic cocktails of all time and reimagine it completely? ✨

The Marie Pimenté is what happens when you ask: what if a Bloody Mary was light, clear, and fizzy. 🍅➡️🫧

This drink is a result of Coupette's constant innovation. Every Sunday they run development sessions, opening the doors to anyone who wants to taste whatever wacky deliciousness they've created. 🧪

I caught the first version of this one, then called the Mirror Mary. It was popular on the night and sold out very quickly. 💨

Honestly, my favourite part of this job is seeing all the amazing things people are doing with Sūpāsawā. 🤩

Send me your weird and wonderful uses for Sūpāsawā. 👇

FARRANDS x COUPETTE

This partnership has been something really special. Hosting the London team up here in Leeds was incredible, but heading down to Bethnal Green to step behind the Coupette bar and return the favour was a proper highlight for the team.

None of this would have actually happened without the support of @johnniewalker a massive thank you to them for sponsoring the whole thing and helping us bring it to life and to everyone who came down to see us on both sides of the bar.

It’s collaborations like this that make what we do so rewarding!

Farrands is heading down south this weekend!
We had the best time hosting @coupettelondon a few weeks ago, so we're incredibly excited to be heading down to their place in London this Friday for a bar takeover.

Archie and Alex will be behind the bar from 6pm till late pouring some of our favorite serves. If you're around Bethnal Green on Friday night, come pull up a stool and join us!

A massive thank you to everyone who came down for the launch of Somewhere // Nowhere last night.

The room was full from the start, the drinks didn’t stop moving and it turned into exactly the kind of Sunday night we were hoping for.

Really great to have @coupettelondon behind the bar for the evening and we’re very excited to be taking Somewhere // Nowhere down to London on Friday 29th May for the return takeover.

Big thanks as well to @johnniewalker for supporting the night and to @remi_uk_ for the tunes that carried the whole evening along nicely.

SOMEWHERE // NOWHERE x COUPETTE

On 10th May, we’ll be launching our new menu Somewhere // Nowhere and we’re marking it with a proper night behind the bar.

We’ll be joined by @coupettelondon bringing their signature style up from London for a one-night takeover, alongside Johnnie Walker.

It’s the first chance to explore the new menu, a collection of drinks built around the idea of Somewhere / Nowhere, alongside a full evening of guest serves, familiar faces and a bar that will be moving from the moment we open.

Expect a busy room, great music, and drinks worth staying for.

From 6pm until late

Better late than never
On women’s day I spent the evening capturing coupette’s take over of brilliant east london women bartenders taking over the coupette bar by storm !
It was a day full of laughter, friendship, community, a little bit of a boogie and climbing on the bar top!
