We are halfway through Sotol Week! 175 bars, restaurants and bottle shops across 6 countries are representing sotol in this second edition, October 12–18.

It is very exciting to see everyone bringing this Mexican spirit to more people through their cocktails and special selections. Thank you to all the participating places and the brands behind the bottles for being part of it.

Find a place near you, stop by for a sotol cocktail, and support the people sharing this category.
Explore the Sotol Week 2026 map and full list through the link in our bio and on the Panorama Mezcal website.

José María “Chema” Dondé Rangel (@mistersuave) believes in giving meaning to what we pour. But what gives a beverage meaning? And how can one justify quality in a sea of industrial imitators?

Just back from Oaxaca, and wow, what a place. Authentic.

I was already all in on mezcal, but seeing it in person takes it to another level entirely. Hearing the families talk about the 8 to 20 years it takes agave to mature puts it in real perspective. That’s as long or longer than some of the world’s most coveted spirits spend in barrel, except it’s all aged in the field before you even touch the fruit of your labor.

The palenques here are a throwback to the old way of doing things: by hand, with patience, no cutting corners. Mezcal is small batch, terroir driven, and family made. Distilled from just agave, yeast, and water, you don’t even have to say there are no additives. (Unless, of course, you’re talking pechuga.) It’s deserving of the attention that it needs in order to break through the common “smoky” misconceptions of the category, and should be a go-to choice for anyone looking for a complex spirit served neat.

Dixeebe!

@bowlofzole is back in Brooklyn.
October 22, Thursday night
@industrycity at 52A venue

Preview in Food & Beverage magazine:

"Bowl of 'Zole Brooklyn Returns: 30+ Chefs, Pozole and 300 Agave Pours"

"Thirty-plus kitchens. More than 300 pours of agave and regional Mexican spirits. One steaming bowl of pozole after another. On Thursday, October 22, Bowl of 'Zole returns to Brooklyn's Industry City for a four-hour deep dive into classic Mexican cuisine and cultura líquida—and for anyone in the food, beverage, or hospitality business, it's a rare chance to taste where Mexican dining in New York is heading next.

"This isn't a generic tasting event. The 2026 lineup stacks James Beard Foundation nominees, Michelin-recognized restaurants, and StarChefs Rising Stars winners alongside independent neighborhood kitchens from across the five boroughs. That mix—celebrated names and under-the-radar operators under one roof—is exactly what makes grassroots festivals like this a working scouting trip for operators, buyers, and beverage directors...."

Did you know that two agaves planted at the same time can reach maturity years apart?

🎙️ Javier Jimenez of Caballito Cerrero (@caballito_cerrero_destilado) explains why harvesting mature agave matters in the latest episode of Skurnik Unfiltered. Listen wherever you get your podcasts.
