It's been a minute since we've hit up @sparrowandwolflv so that was my pick for the evening. Thank you Chef Alec for the #AMAZING squid dish with fresh, crunchy bits, and herby, spicy, goodness in every bite! It's not on the menu yet, but look for it as a special this weekend.

Chicago, big thank you’s

While we didn’t bring home the medal this year, this week felt like a win in every way that matters.

I’m grateful to the James Beard Foundation, the city of Chicago, and everyone who made this experience so special. The conversations, connections, friendships, and opportunities that came from this week are things I’ll carry with me for a long time.

After more than 20 years of building my career in Las Vegas, it was an incredible honor to stand alongside so many people I admire and represent the city that has given me so much.

Thank you to my wife Wendy, my partners John Anthony and Emmanuel, and our family and friends who traveled across the country to share this moment. Your support means everything.

To our team at Sparrow + Wolf, our guests, and everyone who has believed in what we’re building, thank you. None of this happens alone.

And a huge congratulations to Sarah Thompson for bringing it home for Las Vegas. We couldn’t be prouder.

We leave inspired, grateful, and more motivated than ever.

Another year in Las Vegas, another @vegasunstripped, by @ecgladstone and his @thefeastoffriends, with @cchareunsy! Vegas Unstripped, one of the best annual events in town, is Sunday evening @palms Casino Resort, and a limited number of tickets are still available (I think). Pre-Vegas Unstripped, I interviewed @lilli.vegas Chef @tyvorce, who is participating in Vegas Unstripped for the first time this year as a new Las Vegas resident. I am exploding with gratitude right now!

Thank you so much for all of the food and beverage leaders here in Las Vegas for participating in the mock interviews for Centennial Hills High School level two culinary students.

I know you gave up your days off, time with your family, time away from your business to facilitate these mock interviews! Thank you for showing up and paying it forward!

We did over 300 interviews throughout the day and it wouldn’t have been possible without all of the support from our volunteers.

Thank you @stevenson2246 giving us this opportunity! Your kids did an amazing job!

I can’t wait for the next opportunity!

I am completely blown away.

What started as an idea to give our Centennial High School culinary students a chance to practice interviewing has turned into something truly incredible.

On March 9, our Level 2 Culinary students will sit down for mock interviews with some of the most talented, respected, and accomplished leaders in the Las Vegas hospitality industry.

Chefs. Owners. Operators. Managers. Distributors.
Many from award-winning restaurants and powerhouse organizations that help define the culinary scene in this city.

To every restaurant and distributor who is sending someone to spend time with these students — thank you.

Your willingness to show up, share your experience, ask tough questions, and give honest feedback is something these students will remember for a very long time.

This is how an industry grows.
This is how standards are passed down.
This is how the next generation gets stronger.

The amount of talent, leadership, and generosity that has stepped up for these students is honestly overwhelming in the best possible way.

Las Vegas hospitality — you continue to raise the bar.
