What an experience with @lonis.huskisson and @bosleymcgee.

As much as I love catching, cooking and eating fish, I’d never really had a proper run-through on the best way to process and care for a catch, especially from a rock ledge where things can be a little more challenging. Learning the butterflying technique was completely new to me and such an effective way to prepare fish.

Mackerel have always been my go-to live bait, but after trying them prepared this way, I can safely say they’ll be making their way onto our dinner table a lot more often. It was also great to learn more about making the most of underrated species that are often overlooked.

A big thanks to you both for sharing your knowledge and passion. A great reminder that every fish has value beyond just bait.

If you’re down in Huskisson, make sure you stop by @lonis.huskisson.

Big weekend for the Sealions making the trip north to Coffs Harbour in search of fish. The weather forecast wasn’t looking fantastic with plenty of rain on the horizon but what does that matter when you’ll be getting wet either way. In the end the weather came good and despite a lack of current plenty of good fish seen and landed. The boys may have even found the newest mascot at the wash down bay..

Scorpionfish ocean to plate with @josh.bollen - I feel underdressed for this meal 👀

From @josh.bollen: “Pil pil sauce is something I’ve been wanting to try making for a while now. Originating in Basque it’s rumoured to have been discovered by fisherman preparing salt cod at sea. When cooking salt cod in olive oil, garlic and chilli the gentle rocking of the boat emulsified the collagen and oil of the fish with the olive oil. This emulsification creates a silky super creamy sauce that pairs beautifully with the fish. These days it’s been adopted around the world and adapted in a number of ways. Scorpion fish are common around the world and I figured they would be the perfect fish to try it with. Packed with collagen and gelatin they are the perfect candidate that we have locally to try the dish with. The fish I used hung for a few days which I don’t think I’ll leave so long in future, I don’t think drying them really helps this sauce you definitely want the moisture content within the meat to be higher. Unfortunately the sauce I made did kind of split but for that moment it did come together, UNREAL. Maybe because of the wine I put in at the suggestion of a few recipes maybe for a host of other reasons. Maybe I should have just stuck with tradition eh. Either way I’m keen to have another crack I’ve actually been collecting and freezing the throats out of these scorpion fish to try something pretty special soon.”

🚨Spearfishing comp announcement 🚨
Alright here it is! The tournament feature is now live and ready to go🥳
We have teamed up with the legends @divecave to run the first spearfishing comp on the new platform 🙌

🗓️ Comps runs 1st-16th of November

Prizes are the following 🏆
🥇1st place $1000 Dive Cave gift card
🥈Second place Dive Cave mask and snorkel
🥉Third place throw flasher and Your Fish brag mat

We have decided to go with the Australian Sawtail surgeonfish as the fish of choice. We wanted to make it all inclusive, fun and light hearted. Although surgo’s are not the most popular fish, they are actually great to eat!

*Tips for the Surgo
✅ Just make sure you gut and bleed them straight away (be mindful of sharks)
✅ Be super careful and watch out for the sharp blades on their tail as they will easily slice you up.
🧑‍🍳 Some ways to cook: Fish bites, fish burgers, fish wraps, fish pasta, fish curry.

If you have any questions or feedback please reach out.

-Comp runs from 1st-16th of November
-Biggest surgo wins!
-All of the details you can find in the tournament

Safe and happy diving legends!

Chippy by day, kitchen wizard by night @josh.bollen makes no hesitation when he stumbles across a large school of Yellowtail Kingfish with a stone shot on his @wettie.spearfishing roller gun from @ekf_fish_dive_spear.

The fish was long coming in at 133cm and 15.5kg.

Well done Joshy

I came across how @josh.bollen treated his latest Flatty which blew my mind so thought I would do a quick attempt on this 44cm Flathead I caught today in Lake Macquarie.

I rushed it and internally could be neater but tasted beautiful with the stuffing. (Panco breadcrumbs, butter, garlic, lemon zest, salt, pepper, olive oil)

Cooking notes for me next time: I did 10 mins in the oven under the grill. Next time maybe have the grill hotter (hottest) and cook for a pinch less.
