Some steak dishes are about the size of the cut.

This one is about the bite.

We take ribeye cap — deeply marbled, ridiculously beefy, and one of the most flavorful parts of the ribeye — and char it hard so the edges get dark and caramelized while the inside stays juicy.

Then we finish it the Sorry Not Sorry way: with our Vietnamese shaking beef sauce. Savory, garlicky, a little sweet, a little tangy — and exactly the kind of sauce you start dragging your fries through once the steak is gone.

Now picture it:

You’re on the patio in West LA. There’s a cold cocktail in front of you. The Steak Frites hits the table still smelling like the grill, and everyone immediately reaches for a fry.

You were meeting for “just one drink.”

Now you’re ordering dinner.

That is exactly the kind of night this dish was made for.

Most operators think they’re managing food costs. Ron Cardwell thinks they’re just guessing. Our Director of Commodity Strategy talks more about this on the podcast “Full Comp: The Voice of the Restaurant Industry Revolution” with @joshkopel.

Most restaurants are stuck in performative marketing. Posting daily, checking boxes, and wondering why nothing moves the needle.

In the latest episode of the Restaurant AI Podcast, Matt Wampler sits down with Josh Kopel, a Michelin-starred restaurateur and marketing expert, to talk about what actually works.

They cover:

→ Why social media is a low-intent platform (and what to do instead)

→ How AI is changing hiring, training, and operations

→ The coming industry consolidation and how to be in the top 30%

→ Why your website likely converts at only 10% (and how to hit 40%)

→ The future split between "manufacturing" and "experience" restaurants

Josh's mindset shift from chef to marketer is one every operator needs to hear.

I had a really interesting conversation with Josh Kopel, recently. His Podcast, Full Comp, is the real deal in terms of the insider dope of what is going on in the restaurant industry. For those of us who work in it, we know it's a little scary at the moment with team-building, COGS, trepidation in our guest-base, etc., etc. Josh and I hit on all of these topics and more, including what it has been like opening a place in Paris. Give a listen. Link attached above.

Josh Kopel explains why the biggest growth lever isn’t more customers, it’s getting guests to come back more often and spend a little more each time.
