"⁣⁣⁣⁣⁣⁣Everybody talks about cooking with fire, smoke and charcoal but nobody delivers the way Lennox Hastie delivers at Firedoor in Surry Hills, Sydney. The way he uses smoke and warmth from embers to enhance just about everything makes this one of Australia’s consistently brilliant restaurants."⁣
⁣
⁣⁣⁣⁣⁣⁣“To me, there is little more exciting than listening to a society, a culture, through its food, both traditional and contemporary,” says Melbourne-based food journalist, John Lethlean. As the food critic of Australia’s national newspaper, The Australian, Lethlean reviews restaurants from around the country. For the Local Tongue, he shares his favourites, from suburban pho in Victoria, to one of the nation’s most iconic dining rooms. Link in bio.⁣

So this happened Friday 👩🏼‍🎓 The completion of my Masters in Gastronomic Tourism recognised by @lecordonbleuaustralia ... the partner institution with @southerncrossuni .

I absolutely loved studying this postgraduate degree. The hours of reading, critical thinking & assessment deadlines in amongst life, were truly enjoyable. Easier when it’s something that lights a fire in you 🥰 .

Thanks to family, friends, fellow gastronomes & the lecturers that encouraged me 🙏🏻

One of my favourite things to eat is eel. These oily beauties were steamed & roasted in paperbark - the most succulent eel I’ve ever tasted. Oh, and Wallis Lake oysters ... 😍

We're busy taking orders for Christmas hams today! And so many other types of festive foods. This pic is of Juan-Carlo's beautiful creation with a @dulwichhillgourmetmeats leg of ham. He achieved this with four hours in the smoker using @tonytan53's pineapple and Filipino golden rum glaze. #christmasham #getyourordersinquick @suenogram

Got leftovers from your pork roast? Here's an idea from our creative customer Juan-Carlo: turn it into Shanghai-style red-braised pork! There are many variations so just Google a recipe. Looks great! #leftovers #pork #chinese #redbraisedpork
