This time last year I wasn’t long back from a truly wonderful trip to Timor-Leste, visiting our producer partners Stewart and Kar-Yee @karstorganics and spending time with the coffee farming communities of Letefoho 🇹🇱 This week I’ve been organising my camera roll from that time, there is a lot of wonderful moments not yet shared... So, for a little Flashback Friday, here are a few more memories from a very special trip. Beautiful landscapes, plenty of hard work, but most importantly wonderful people ❤️ I feel incredibly privileged to know exactly where our coffee comes from, see the impact it has, and to have spent time with the communities who produce it 🙏 Hope to be back in Letefoho again one day soon 🇹🇱❤️☕️ Happy bank holiday weekend everyone 🤗

TIMOR LESTE 🇹🇱☕️ Back in February, we were lucky enough to cup some samples from @karstorganics Karst work to shorten the supply chain between the farmers in Timor Leste and UK/EU coffee roasters, meaning farmers get a better price for their coffee. The coffee we reserved is being harvested as we speak and by the time it is processed, packed and shipped into the UK it will be early January before we take delivery. This goes to show the planning we put into making sure we get a good variety of the world's best ethically sourced specialty coffee for our roastery. Although you are going to have to wait for this one... we assure you, it will be worth it! More information on these coffees will be added over the next few weeks. 👀 #specialtycoffee #timorleste #singleorigin #ethicallysourced #coffeelovers

From Letefoho to South Oxfordshire and back again! Many miles, but worth it. 🌍 This time last year I was preparing for what would become one of the most incredible trip I’ve ever made. Travelling to Letefoho, Timor-Leste, gave me the opportunity to meet Carlos and his family, spend time with the Hatuhei producer group, and see first-hand the care and hard work that goes into producing the coffee we roast and enjoy here at Dark Horse. A year on, whilst we’re busy roasting, supplying and serving these beans in South Oxfordshire, Carlos is back home in Letefoho doing what he does best. Thanks to our friends Stewart and Kar-Yee at @karstorganics who live and work alongside the producers half of the year through out harvest and processing period, we’re able to stay connected despite being on opposite sides of the world. It feels quite special to think that a year ago I was sat with Carlos and his family in Letefoho, and today we’re sharing coffee and conversation again. A reminder that coffee isn’t just about what’s in the cup, it’s about the people, friendships and connections behind it. 💙 #letefoho #timorleste #specialtycoffee #coffeefarmers #fromforesttocup

🔹 The Arara variety has a more compact crown shape and a larger diameter than common Sarchimores such as Tupi and Obatã. It has abundant, thick, forked secondary branches and a high degree of foliage. The fruits are yellow, the seeds are oblong. High yields offer very low levels (1%) percentage of mocha seeds. According to the results of the behavioral tests, it shows high tolerance to drought, high quality beverage and late fruit ripening cycle, and high resistance to coffee rust. 🔹 Reels by @karstorganics 🔹 Bu muhteşem kahve yolculuğunu görmesi gereken bir kahve arkadaşını etiketle! 🔹 Tag a coffee friend who needs to see this amazing coffee journey! 🔹 . . . . #roasters #türkiyekahve #turkiyekahve #turkeycoffee #coffeeroasters #fyp #dailyroast #darkroastcoffee #tag #coffeefarmer #braziliancoffee #coffeevibes #kahvekeyfimiz #coffeelove #coffeeindustry #TR #coffeecommunity #coffeeprocessing #cultivararara #coffeefacts #coffeefact #coffeeculture #coffeeaddict #coffeeholic

New Coffee Alert! Timor Leste Eratoi Direct trade isn't just a buzzword for us - it's the reason we work with Karst to source this incredible coffee from Eratoi, Timor-Leste. Community grown by 40 smallholder farmers. High in the Letefoho mountains @ 1,800masl. The result? Bright, clean speciality coffee, with notes of sweet apple tart, crisp white wine and gentle hints of black tea. Better still, transparent pricing and premium crop pricing enables household incomes that are growing year on year as a result in a nation reclaiming a legacy, rehabilitating coffee forests and carving out a well-deserved place in the global speciality market. This is what it looks like when the supply chain works the way it should and we're proud to be part of it. #DirectTrade #SpecialtyCoffee #TimorLeste #CoffeeStory

Going to London Coffee Festival? I've been lucky to get a guest spot on @ix.water stand, they are official water sponsors for the 4 days. I'll be brewing up some amazing coffees from 1 till 6 on Saturday. The stand is at the back of the ground floor, near the robots 🤖 📍Stand G49 And as I'm terrible at choosing or packing lightly I'm bringing 3 coffees with me. An amazing Peru nanolot from @khipucoffee A funky little Timor from @karstorganics And a great decaf to stop the late afternoon twitches from @omwanicoffee So come along, say hi, drink some coffee and maybe even learn a bit about water 💦💦 Will is see you there? #specialtycoffeeroaster #guest #supportsmallbusiness

Coffee’s journey part 4. Hulling, grading and shipping. We’re still in Timor-Leste with the wonderful @karstorganics to show you how parchment coffee from the mountains turns into export ready green coffee 😀 Once processed, coffee is still wrapped in its protective parchment layer, not quite ready for the journey to our roastery… NEXT STOP: Dili 🚛 A convoy heads down Dili where the magic continues ✨ At the hulling facility: 🔸 The parchment layer (and most of the silver skin) is removed - we need a clean polished bean 🔸 Moisture levels are carefully checked. The green coffee needs to be moist enough to retain flavour potential but not so moist they will mould during transit. 🔸 Beans are sorted by size and final defects are removed, uniform beans aid an even roast 🔥 NEXT STEP: Bagging and shipping 📦🌍 Only then is the coffee bagged, with full traceability back to the farming community. Packed into a container and shipped 🚢 Eventually landing at the roastery, ready to be roasted! 🔥☕ 🎥 Stewart @karstorganics #Coffeejourney #specialitycoffee #farmtoroaster #darkhorseroastery #timorleste

Farming in Timor-Leste means working with incredibly steep terrain. In the Hatuhei and Tau-Rema regions especially during the rainy season, the risk of erosion and landslides is a constant reality. Instead of concrete or plastic, the farmers use biomass barriers. This is biological engineering at its most intuitive: + Fallen logs, pruned branches, and organic waste matter are strategically placed along the mountain's contours. = These barriers slow down water runoff and trap soil that would otherwise wash away. # Over time, these barriers break down, creating natural terraces of rich, fertile land that is easier to harvest. By investing in equipment and paying significantly higher prices per kg, our partners at @karstorganics ensure these labor-intensive practices are economically viable for the farmers, protecting both the community’s future and the land they love.

For the farming communities of Letefoho, "regenerative farming" isn’t a new thing—it’s an ancestral worldview. Many of the coffee farmers Kar Yee and Stewart from @karstorganics (our importing partners) work with have a deep spiritual connection with the land and its inhabitants. Farming is a practice of respect, not extraction. This photo shows a healthy coffee forest at Tau-Rema, a farming community at almost 2000 masl, where coffee is intercropped with yams and arrow root amongst other plants and grows under a shady canopy of nitrogen-fixing Albizia and Casuarina trees. When Stewart and Kar Yee first began working here, they found that while the trees were well tended to, many were quite old which impacted both the yield and the flavour quality. To address this, they helped the community tap into a state-led coffee restoration program. Here, you can see the results: younger, smaller coffee trees recently planted alongside the older canopy. The farmers still carry out their traditional regular clearing, pruning and weeding throughout the year and the weeds and biomass resulting from this process serve as a mulch around the base of their coffee trees which breaks down and provides nutrients to the coffee by replenishing the soil. Thanks to these measures the community has seen a successful turnaround—with both quality and yield improving year on year. This rejuvenation of the system and its biodiversity doesn’t just make for a healthier ecosystem; it’s what gives the coffee from Tau-Rema its distinctive quality and flavour profile. 📸@karstorganics (The Tau-Rema is now back in stock on our webshop.

BACK IN STOCK +++ 🇹🇱Timor-Leste Tau-Rema🇹🇱 +++ Fully Washed +++ We are very pleased to have coffee from the Tau-Rema community back on our menu for the fourth year in a row. This Fully Washed lot offers a balanced profile of dark chocolate, red grapes, and raw cane sugar. The farmers in the Letefoho region have grown coffee for generations. For these communities, and especially the farmers in the remote village of Tau-Rema, farming is guided by a deep-rooted belief that the land and all its inhabitants are interconnected. This inherent respect for the ecosystem means "regenerative" farming isn't just a modern trend here - it is a way of life. While these communities have long held the expertise to grow exceptional coffee, they have often lacked a say in the global market. @karstorganics have set out to bridge this gap and we are proud to work them. Based both in Timor-Leste and the UK, Stewart and Kar Yee provide the essential connection and infrastructure—from technical support and training to direct market access—ensuring the farmers receive a significantly higher price for their stewardship. Over the coming days, we’ll be sharing more about the work Karst Organics and the coffee farmers of Letefoho have put in over the last year to bring back this crowd pleaser of a coffee!
