FANGIRL’ing 😳 when we met Holybelly’s Nico in person! My BFF Auntie Kathy and I have marveled at Holybelly from afar for years; founders Nico & Sarah created a unique, happy place for excellent pancakes, hash browns & folded eggs to be celebrated in Paris. We tuned into his podcast, That Restaurant Thing, for interviews with fellow Parisian chefs about the grind & passion that goes into creating a place for sustenance & soul. We exchanged T-shirts halfway around the freakin’ world between @eggshanghai and @holybellycafe. So Auntie Kathy and I at long last popped in for breakfast. As we’re eating, we see him waltz in the door lugging a huge crate of produce and breeze past our booth, lifting not just the hair on my head but raising the ones on my arms 😂 It was MORTIFYING. I went red and we cracked up. Like seeing a unicorn in the flesh? Not the best analogy, but simply a reaction to how immensely we admire his & Sarah’s passion, work ethic, good taste, creativity, hustle and out-of-this-world humility — he remembered every DM and didn’t hesitate for a second in recalling the hand-dyed Egg t-shirt we’d mailed over a year ago. Dreaming of those fluffy, maple-doused pancakes, oat-studded hash browns, favorite new chili sauce (how can I order some bottles in Shanghai?!) and feeling inspired all over again 🍳
