I did a quick meal prep today of quinoa avocado spinach power salad (recipe in stories) & air fried eggs 🌱🍅🥚. Back in the office tomorrow after WFH everyday the last 2 months 😒. I made these strawberry pop-tart cookies yesterday so hopefully that will cheer up my coworkers. They were good & could easily be changed with other flavors! 🍓🍪
Onto the last week of 4 week strength with Callie then I’m going to start the new barre program! 💪🏻

HAPPY SUNDAY! ☀️ Started my day with a quick 30 min workout since I took Thursday off 💪🏻, enjoyed seeing the girls for @tiubooksandbabes book club to discuss Funny Story 📕, & then meal prepped some of my @toneitup faves with a spicy marg 🍹- cottage cheese queso (I used nutritional yeast instead of shredded cheese), Brian’s lean sauté, fajita bake with shrimp, & airfried coconut shrimp 🧀🍅🫑🍤.

Another week of workouts in the books, & I finished the first week of 4 week strength with @calliegullickson 💪🏻. I love her strength workouts & I hadn’t done a bike bootcamp in a while 🚴🏻‍♀️.
I didn’t meal prep for this week, just doing easy stuff like bagged salad with protein. I made these key lime Oreo cheesecake bars this week though and they were delicious- https://saygraceblog.com/key-lime-oreo-cheesecake-bars/ 🍋‍🟩.

HAPPY SUNDAY! ☀️ Another week of workouts done ✔️ & I got my classes stacked to start @calliegullickson 4 week strength program tomorrow 💪🏻.
I finished The Cliffs this week 📕, @reesesbookclub July book pick, which I enjoyed. Next up is The Kind Worth Killing. I got A Talent For Murder from @bookofthemonth last month without realizing it was a series, so I want to read the first 2 books first. Luckily they’re both on KU which I have free for another month 👏🏻.

Finished week 3 of #TIUTurnUpTheHeat 💪🏻. Short work week coming up. My friend & I are driving to Rocky Point for a long weekend. So excited to get away for a few days & get to the beach 🏖️. I didn’t do a meal prep this week, just eating stuff we have & I made GF caramelized onion pasta yesterday that we’ll be eating for a few days🧅🧄🍝.
I read The Rebound this week, it was really cute! I read her holiday books last year & also really liked them 📕🩷. Now I’m 1/2 way through Just For The Summer ( @tiubooksandbabes July book) & I am also really enjoying it. It’s the 3rd book of the series & I’ve loved them all (highly recommend reading them in order)!🥰 #readmorebooks
We have our annual Thanksgiving in June at a friend’s today so I’m off, hope you all enjoy your Sunday! ☀️

Week ✌🏻of #TIUTurnUpTheHeat done! ✔️ I completed all the workouts, but I had to take some of them a little easier while I’m still recovering from being sick (& doing shorter rides). I think this next week I should be able to bump it up a bit though! 🤞🏻💜💪🏻
Quick #mealprep today- Burger in a bowl (with bison) & slow cooker cilantro lime tacos (with turkey) 🍔🍠🌮.

I woke up Thursday with a sore throat & by the afternoon pretty sure I had the full on flu (extremely sore throat, runny & stuffy nose, chills, body aches, dry heaving- the works), it’s been a great few days 🤧. Still not feeling good & could only manage some stretching again today 🧘🏻‍♀️. I was able to get out to the store to get some groceries though, followed by laying in bed & reading, then doing a quick meal prep, & resting again. Everything’s so draining still! Hopefully I can get back into some of these #TIUTurnUpTheHeat workouts tomorrow 💪🏻. I did get through Daris Rucker’s audio book today, which I highly recommend if you’re a fan, & I’m almost done with The Paradise Problem which I am also loving! 📚💜
On the menu this week is-
•Turkey breast & veggies
•Crispy salmon salad
•Summer harvest quinoa bowl
•Mediterranean bowl

I decided to take today as a rest day instead of tomorrow since I’m starting the #tiuturnuptheheat challenge tomorrow! 💪🏻 I had to adjust some workouts this week due to hurting my foot & being sore but I got 5 days in.
I really enjoyed @tiubooksandbabes book club discussion today on First Lie Wins, even though I read it a few months ago & forgot some things haha 📚. Then I meal prepped for the week using recipes from the @toneitup challenge 👩🏻‍🍳. On the menu this week-
•Summer fajita bowl -omitted mayo & subbed turkey
•Quinoa power breakfast bowl -I’ll air fry eggs day of so they’re warm
•Lemon berry chia seed pudding
•Double chocolate chip quinoa bowl
•Tuna salad cucumber boats -I’ll make later this week

Felt good to get back to working out after taking a long weekend off while I was visiting family for Mother’s Day. Got some food prepped for the week & classes are stacked & ready to go!👩🏻‍🍳💪🏻

•Poke bowls -jasmine rice, cauliflower rice, tuna, edamame, avocado, seaweed, greens, & pickled cucumber & onion

•Protein pancake tray bake from @toneitup -it’s low in cals so I’m going to pair it with yogurt for breakfast

•Roasted garlic -2 bulbs roasted in a terracotta pot for 45 min & they spread like butter!

•Bison & air friend potatoes -I made burgers for dinner tonight & then pan fried the rest for breakfast bowls

Short work week for me this coming week since I leave on Friday to go to CO to see family 👏🏻. My sister & I booked my mom a flight as a Mother’s Day gift so we could all be together 💕. So I did an easy #mealprep today of sweet & sour tofu (recipe in stories) & tofu masala for lunch this week, a PB & J protein yogurt bowl for breakfast in the office tomorrow, & trial mix for a snack 😋.
