Pistachio Matcha Tres Leches Cake:

Matcha Cake with Pistachio & Cherimoya Swirls
Pistachio Milk Mixture
Pistachio Cream
Salted Pistachio Praline Drizzle
Fig Leaf Gel
Toasted Pistachios
Golden Plums

A while ago, I tried fresh Cherimoya from @ranchosantacecilia and was blown away by how tasty it was. It reminded me of super juicy Vanilla and Lychee but less floral.
I think eating them fresh is the best 😂 but wanted to make a dessert so I made jam to preserve it until I get more ideas.

Then a light 💡 hit - Pistachio and Matcha!
Cherimoya's flavor is subtle so I can't use too much Matcha but wanted to add more green & vanilla flavor🤔 -> Fig Leaf🌳 is in season!!

I asked Aldo from @chavezfamilyfarms805 because I know they have figs and they don't spray their produce with bad things.
He was really interested in the idea and brought me a lot of leaves🥰
1/2 of the leaves were dried in our oven in low heat. I turned them into fine powder by blending in Vitamix. It tastes like Matcha with a hint of fig, and it surprisingly kept most of the green color.
The rest of the fresh leaves, I tore them up into small pieces and steeped in simple syrup.
I blended the syrup with leaves and all then passed through a fine sieve. It became a beautiful green syrup, full of Fig flavor❤️
You can add this in soda water or cocktails😉

To make a gel, I simply blended the syrup with a tiny bit of xantham gum because I didn't want to lose the color and grassyness. (You can also use agar agar or pectin but they require heat to activate.)

Limited quantities available until I get more natural Pistachio extract. It should arrive tomorrow!🤣
Thank you for your understanding🙏

Thank you for your big love and support for Tres Leches Cakes!
We made a lot but they are all sold out.

We are preparing new ones with different flavors. I'm still tweaking few more components but
they should be ready from lunch (7/30)🤞

Tiramisu Cheesecakes have also been a big seller, but it's coming to the last 12 pieces. If you haven't tried it or want to get one again, you better hurry!

Melon Parfait (Melon Sorbet in 1/2 Sweet Melon, topped with Vanilla Ice Cream, Vanilla Foam and Cinnamon Crumbles) - so refreshing!

Shiso Green Goddess Farmer's Market Salad

Fresh farmers market peaches, heirloom tomatoes, cucumber, snap peas, mixed greens, and fresh herbs, tossed in our house-made shiso green goddess dressing.

Topped with @danishmillbakery brown butter croutons for a satisfying crunch.

The peaches are sweet, the tomatoes are at their peak and these are just some of the reasons we love California in the summer! ❤️

Available for a limited time at Ramen Kotori.

Cococonut Cake Guava Cheesecake🥥🌺🌈

Our signature cheesecake is swirled with guava purée (local guava from @ranchosantacecilia), and sandwiched between 2 layers of fuffy coconut cake covered with coconut cream cheese frosting and lots of shredded coconut.

It tastes like the beginning of summer is around the corner☺️

After having a bite of this dessert, @kiko_eats_ramen told me:
"I'm so glad you are my wife already🤗 Otherwise, I had to persuade you to marry me for this cake🥹"

... I can think of many more reasons he should be glad that I'm already his wife😎🫳🎤

🤣🤣🤣

Anyways, he adores this cake as his new favorite cake so that's a reason for you to get a piece before they sell out😆
