I don’t care who wins the Super Bowl tonight as long as this lasagna survives halftime 🏈

See recipe below- Serves 6-8ppl

¼ cup (60 ml) extra-virgin olive oil
2 medium white onions, diced
2 cloves garlic, sliced
2 pounds (900 grams) ground beef
1 tablespoon salt
1 teaspoon ground black pepper
6 cups (2 700-ml jars) plain tomato passata
80 grams tomato paste
2 cups (475 ml) water
500 grams egg lasagna sheets or gluten-free lasagna sheets
300 grams soft ricotta cheese
340 grams fresh mozzarella cheese, grated
Handful Parmesan cheese, freshly grated

Heat the olive oil in a wide, deep nonstick pot on medium-high heat. Add the onions and sauté until translucent, about 2 to 3 minutes. Add the garlic and cook, stirring, for 1 minute. Add the ground beef and sauté, breaking it down with a wooden spoon, until fully cooked. Stir in the salt, pepper, tomato passata, tomato paste and water and stir well. Cover the pot and bring to a boil, then reduce the heat and simmer for 1 hour, stirring occasionally.

Preheat the oven to 350ºF (180ºC). Have the lasagna sheets (not cooked), ricotta, mozzarella and Parmesan prepared on the counter next to the meat sauce. Pour one ladle of meat sauce in a 3-inch-deep, 9-by-13-inch baking dish and spread to cover the bottom. Arrange the lasagna sheets in a single layer, slightly overlapping. Pour about 3 ladlefuls of meat sauce on top and spread evenly. Spoon out a third of the ricotta evenly over the sauce, then sprinkle with a third of the mozzarella. Repeat to make two more layers, finishing with meat sauce then mozzarella then ricotta, then sprinkle the Parmesan on top.

Cover the dish tightly with foil and bake for 40 minutes. Uncover, then stick a knife or skewer in the centre to ensure the lasagna sheets are cooked thoroughly. If not, continue baking for a few more minutes. Bake uncovered for an additional 5 minutes if you like the cheese browned.

THANK YOU.

Oufffff better late than never. This year was the hardest yet. But looking back, I’m overwhelmed with gratitude.
The people. The trust. The opportunities.
This work truly kept me going.
Countries traveled, new friends, old friends, and projects that were equal parts exciting and terrifying (in the best way). Beyond.
