Lubina, branzino, sea bass - what’s in a name? And why is ours the best?

We source our Lubina and Daurade from the legendary @esteroslubimar in southwest Spain, where the fish live in essentially wild conditions: Atlantic tides are constantly refreshing their water and bringing in a natural diet of shrimp and mollusks. Further, the presence of these species supports other natural wildlife, making the estuary a key location for migrating birds.

These fish are only harvested when we place an order - twice a week, year round. Their consistency and exceptional quality make them absolute staples for a menu.

Maine Halibut on display 🎣 What a beautiful night to visit @primorestaurant , witness @chefmelissak break down a whole halibut, and support Fishermen Feeding Mainers @mainecoastfishermen 🫡 piglets were also a highlight.

We’re hosting a Japanese cuisine double header!
