The cover of the first issue of US Foods’ Food Fanatics, made for the relaunch of the magazine.

Super grateful to my editor and good friend Katie for the trust on that very first cover! Also super excited she called me back for another cover and was able to bring me a printed copy of the first issue. Nothing beats holding your work in your hands.

Massive shoutout to the local legends at Kings of Fish in San Pedro for letting us take over. After we wrapped, Katie, Rick and I sat down with Tommy, the boss, over one of their famous fish trays and spent an hour hearing his stories and shooting the breeze. Tommy has since passed but we were lucky to share that afternoon with him. Rest easy boss!

It's been one week since the Restaurant Franchising & Innovation Summit in San Diego.

And honestly... we're still thinking about the conversations, the insights, and the energy across the restaurant industry.

We had the opportunity to connect with operators, partners, and innovators all focused on one thing: solving hiring.

At @swobapp, we're building for exactly this. Helping restaurants stay fully staffed, faster.

Grateful for the connections that were made. This is just the beginning.

👉 Swipe through to learn the 5 biggest lessons I took home from the @us_foods Fanatics Show 2025 in Las Vegas.

This wasn’t just another trade show.

@us_foods brought together 5,000 restaurant professionals with intention—showing us that every second counts.

From telling the story that shaped everything for me…

To moderating a panel with @mungaro and the @sanpedrofish family to share their secrets of launching @kingsoffish on @amazonprime…

To exploring tech tools that actually help operators tomorrow, not someday…

This was different.

This was built for us.

Huge thanks to @us_foods for putting on a show that reminded us all: no one is coming to tell your story.

The power is already in your hands.

Early last year I signed on to my LinkedIn account and social media accounts with a cigar to share some of the struggles our business had been dealing with between the pandemic and closure of our legacy locations topped with a LOT OF RAIN which makes running a restaurant very challenging, especially when most of the seating is outside!

I was blown away by all of the responses and continued sharing posting for several months which lead to a new Project, my new FI$H FACTOR podcast produced through our partnership with @shawnpwalchef and his great team at @calibbqmedia ! We’ll be releasing episodes weekly and, if you’re attending the @nationalrestaurantshow in Chicago next week, we’ll be recording more episodes there so stop by and say “HI”!

In the meantime, here’s an update on our San Pedro location which was, is and will always be the foundation for just about everything I’m working on from @sanpedrofish to @kingsoffish and beyond!!
