squid, luxury rice -

A dish from a menu past. Forgive me, I’m playing catch up here in a big way. The tentacles and tubes of Squid from @luxeseafood are separated and further cleaned before being processed for the stuffing and the vehicle for stuffing. Luxury Rice, a mix of grains with a name minted by @mattschalerofficial is cooked in Fish Stock with Squid Ink before being seasoned with @gomezmunak Fermented Tomato Water, @finleyfarms Leeks, @805colemanfamilyfarms Garlic Chives, @thejapanesepantry White Soy, Buckwheat Honey, and Fish Sauce. After seasoning the Rice is mixed with ground @terry.ranch Jujubes and the Squid Tentacles. This farce if you will, is piped into the Squid head and secured with a toothpick. The stuffed heads are rolled on the plancha and blasted with Water @benihana style to steam through. After they are cooked they are nestled in a Sofrito of Crimini Mushrooms confited with Sweet Onions, Garlic, @805colemanfamilyfarms Thyme, Fish Sauce, @conservasortiz Anchovies, Chile Oil, and Extra-Virgin Olive Oil. Pre-nestling though they are glazed with Gochujang, Red Miso, Yondu, Garlic, Rice Vinegar, @thejapanesepantry Sesame Oil, Rice Vinegar, and Dashi. Post-nestling they are topped with Sweet Onions marinated in @konbi Burnt Onion Dashi bolstered with Violet Syrup and Red Wine Vinegar and @fresnoevergreen Bitter Melons pickled with Aka-su, White Soy, Mirin, Buckwheat Honey, Water, Ginger, and Salt. The veg is seasoned with Gochugaru and Sugar before crowning the Squid.

I’m not much of a Sandwich Person — it’s not that I don’t love bread (I do), it’s just that I don’t always have the patience for the assembly. But I gained a newfound interest after doing some scouting and reporting for “57 Sandwiches That Define New York City,” and have been revisiting these recipes with new appreciation: 1. @darunkwak’s Gilgeori Toast (a Korean cabbage sandwich that somehow tastes like a vegetarian Big Mac), 2. @babybluesny’s Halloumi, Arugula and Tomato Sandwiches (a meat-free BLT inspired by Greek diners), and 3. @konbi’s legendary egg salad sandwich (mathy to assemble; a delight to cut into).
