Move over pumpkin pie… there’s a new Greek goddess for your Thanksgiving table! 🎃🍁🍂

With the help of friends @krinoscanada, I have taken one of my favourite Greek pastries, bougatsa, and given it a little Thanksgiving twist. Think creamy pumpkin-spiced semolina custard, wrapped in buttery, delicate layers of fillo, baked until golden and crisp. {AD}

It brings together two things I love, the comforting flavours of fall and the beautiful flavours and traditions of Greece. I bake it in a springform pan as it makes for a beautiful presentation at your table.

And the secret to getting those gorgeous, delicate, crispy layers? Krinos Fillo.

Krinos has been making fillo right here in Canada for decades, and I love how their extra thin fillo creates those gorgeous, light and crispy layers.

Finish it with a generous dusting of cinnamon sugar, and serve it as the centrepiece of the dessert table. It’s a dessert that I think will become a new favourite.

I hope I’ve inspired you to bring sweet Greek flavours to your Thanksgiving table.

🇬🇷 FETA & SUNDRIED TOMATO-STUFFED CHICKEN 🍅

Looking for an easy dinner with big Mediterranean flavour? This juicy chicken is stuffed with creamy feta, sundried tomatoes, spinach and herbs, then seared until golden and baked to perfection. 🤍💙

The best part? You can pick up the Krinos Feta, Krinos Sundried Tomatoes and Krinos Extra Virgin Olive Oil right here at Euro Fine Foods!

🍴 Ingredients
• 6 boneless, skinless chicken breasts (about 2 lbs total)
• 2 cups spinach, roughly chopped
• 4 oz cream cheese, softened
• ½ cup Krinos Sundried Tomatoes, drained & chopped
• 1 cup loosely packed fresh basil
• 1 garlic clove, finely chopped
• 3 oz Krinos Feta, crumbled
• 2 tbsp Krinos Extra Virgin Olive Oil
• Salt & pepper

👩‍🍳 How to make it

1. Preheat oven to 375°F. Carefully cut a deep pocket into the side of each chicken breast without cutting all the way through.
2. Heat a large oven-safe skillet over medium heat. Add the spinach and cook until just wilted. Transfer to a bowl and allow to cool slightly.
3. Mix the spinach with cream cheese, sundried tomatoes, basil and garlic. Gently fold in the feta.
4. Divide the filling between the chicken breasts and season with salt and pepper.
5. Heat the olive oil in the skillet over medium-high heat. Brown the chicken for about 3 minutes per side, then transfer the skillet to the oven.
6. Bake for 16–18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Let rest for a few minutes before serving.

✨ Creamy feta + savoury sundried tomatoes + juicy chicken = the perfect weeknight dinner.

Dakos-ish Tomato Salad 🍅🇬🇷
Serves 4-6

Ingredients:

* 4–6 crostinis or Greek rusks
* 4–5 ripe tomatoes, chopped
* ¼ small red onion, very thinly sliced
* 3 tbsp capers, drained
* 150 g feta, crumbled
* 2 tbsp fresh oregano, roughly chopped (or 1 tsp dried)
* 3 tbsp good olive oil
* 1 tbsp red wine vinegar
* sea salt
* cracked black pepper

Now for what to do….

1. Put the crostini or rusks on a plate. That’s it. No oven. No baking. We’re not trying to win MasterChef (today at least).
2. Throw the tomatoes into a bowl, add a good pinch of salt and let them hang out for about 10 minutes. They’ll get juicy. Very juicy. This is important because tomato juice is basically the sauce.
3. Add the red onion, capers and oregano.
4. Drizzle in the olive oil and red wine vinegar. Give everything a gentle toss. Taste it. Add more salt or pepper if it needs it. You are the chef now. Trust yourself.
5. Pile those juicy tomatoes onto the crostini or rusks, making sure all those glorious juices make their way down.
6. Cover with crumbled feta, another little drizzle of olive oil and some fresh oregano.
7. Eat immediately. Preferably standing around the kitchen because apparently that’s where the best food is always eaten.

And yes, technically…traditional Dakos is made with Cretan barley rusks. But if you have crostini, congratulations—you’ve just given Dakos a little European summer fling.
