We kicked off our outdoor season with a sweet wedding @getchowines last weekend—and, oh what a glorious day! The sunshine, smiles and blue skies were a balm for our winter-weary souls and it felt so good to be outside with our amazing team again.

We started out with bountiful grazing boards, freshly shucked oysters and caviar in the winery, which was decked out in dreamy @hilaryhorvathflowers, then served a late winter meets early spring menu cooked on our trusty @barebonesliving grills:

Caramelized squash, spicy greens,
honey sherry vinaigrette, chevre, toasted hazelnuts

Cedar planked salmon with mustardy creme fraiche, chives, shaved radish, @leftcoastfresh pea shoots and flowers
+
Fregola sarde with melted leeks,
sweet peas, mascarpone and mint

Duo of fire-roasted and red wine braised @eola_crest_cattle beef with pomegranate gremolata
+
Cassoulet of root vegetables, garlic confit and crispy breadcrumbs

Not pictured but happily devoured by all: a fancy s’mores bar with handmade @1927smores and lotsa fun toppings.

Hats off to our amazing team @shityouseeatcashncarry @cheflumberjack @kronevincent @tish_tosh @jennlyonfordham19 @zeppelin14 💙, big 🙏🏼 to @poweredbypaige and the whole @getchowines team for the lovely venue, wines and helpful hands, and of course the darling newlyweds, Corinne & Drake!

As we wind down from a crazy summer, I can’t help but reflect on the community around us and what cheese has truly brought into our lives, both personally and professionally: kindness, connection, and care.

Every single person in these photos represents more than pizza and cheese, they embody realness, passion, and heart.

On the days when the weight of the world feels heavy, I look back at these pivotal encounters and feel so grateful that my craft has connected me with such special people who just happen to make my favorite food.

We keep it real around here 🤙

Moments (mostly food) from a feast amongst the vines with @beauxfreres ✨ This is our fourth year collaborating with Beaux Freres for their annual wine club dinner and it is always a pleasure pairing the best summer ingredients with their legendary wines. It’s also a little bittersweet as it usually marks a moment in time when our beloved outdoor event season begins to slow and we hug our team tight, begin to put away equipment, move the party indoors, and start dreaming of all the places we want to go and food we want to cook next season.

Heartfelt thanks to our mighty Team Chambray and the BF crew for making magic and keeping it cool on one of the hottest days of the year!

This year’s high summer menu:

Heirloom Tomatoes Nicoise with olive, cucumber, potato and green bean relish, whipped @briarrosecheese fromage blanc and basil pistou

Cedar plank salmon with sauce gribiche, French lentils with fennel, baby turnips, hazelnuts and tarragon

Fire-roasted spiced lamb with mint chimichurri, blistered nightshades, preserved lemon hummus and pistachio rose petal dukkah

Orange blossom pavlova with Oregon berries and honey whipped cream

Last week, we had a gathering of pizza makers from all over. Our friends from @cairnspringmills hosted a community day and with the help of our farmers, the tam tam team brought together the chow for the event.

Thank you everyone who traveled to be with us for the day, and special thanks to @chuckanutbrewery for creating the space for us all to gather.
