🎉 Faculty Spotlight: Dr. Martin Seay

We are proud to celebrate Martin Seay, Ph.D., CFP®, who is helping lead the newly funded Kansas Futures Project, an initiative designed to empower Kansas students with the knowledge and tools they need to make informed decisions about education, careers, and financial well-being.

Supported by a $400,000 Upward Mobility Transformation Fund grant, this partnership between Kansas State College & Career and K-State's Institute for Financial Education and Prosperity will bring together career exploration, college planning, and financial literacy resources for students across the state.

As a leader in financial education and student success, Dr. Seay's work will help Kansas students answer some of life's biggest questions:

✨ What do I want to do?
✨ What education or training will I need?
✨ What will it cost?
✨ How do I make a plan to get there?

Congratulations, Dr. Seay, on this impactful work and investment in the future of Kansas students! 💜🌾

What happens when you bring curious and driven dietetic interns and innovative and dedicated farmers and ranchers together?

An Ag Immersion🌱🐷🍴🐮🎃

These interns and farmers have so much passion and by bringing them together, connections are made to better understand the challenges and opportunities in our food system, and how food is raised and cared for every step of the way, and the purpose behind it all. Connections were built, lightbulb moments were had, and good conversations happened 💡

We appreciate the students who said yes to this opportunity to bring a unique experience into their curriculum and the farmers who joined and hosted us. Food connects everyone and it only makes sense to bring these groups together.

All of us walked away with greater insights, different perspectives, and things to keep thinking on as we move forward and do our role in this food system.

Thanks to the @kumeddieteticinternship and @kstatehhs Dietetic Interns for joining us on our journey to farms and ranches🫶🏻

Milk Shots and Dairy Cows🥛🐮

We talked about how pasteurization saves lives, how milk is bottled, antibiotics in milk you purchase at the grocery store (spoiler: there are none!), cattle care, how cows are milked, what they eat and more.

Melissa at @hildebrand_farms_dairy keeps all of her calves in individual pens until they’ve developed some natural immunity to ensure they get the best start and nutrition. From there, they move into pens with a few cattle, then more, until they make their way into the dairy herd (the females) or the beef herd (males).

And the most wild thing - they’ve had robot milkers for a year so we saw how they taught the cows to use them and how it’s given them more data and information to better care for their cows. The cows can be milked as frequently as they want and Melissa has all that data and information on each one in her phone to easily check on them. SERIOUSLY SO COOL!

It was great to geek out with Melissa who loves all things cattle and food safety. It was the most remarkable way to wrap up our tour✨

We’ve loved having these curious and insightful @kumeddieteticinternship and @kstatehhs dietetic interns on farms this week.

Pumpkins, squash, tomatoes, oh my!

It was an absolute joy to connect with Scott and talk about how he raises produce for grocery stores and restaurants around his community and even on pizzas from ingredients grown on their farm on Thursdays!

He’s a first generation farmer and has always had an entrepreneurial spirit and works to ensure his farm is as sustainable as possible both environmentally and economically.

We talked through the challenges of raising produce including labor, finding markets for the produce when it’s ready, dealing with how the weather will change your plans and the crops, being nimble, and just the diversity of crops grown and places to sell to.

From going from selling bunches to boxes and now to pallets and thinking about truckloads. He’s continually grown and talked about the risks associated with vegetables and how insurance works.

Local food, organic, conventional, and things grown overseas, it all has a home on our plates and it’s been valuable to see the labor, infrastructure and passion involved.

It was fun to visit @juniperhillfarmsks with these @kstatehhs and @kumcdieteticinternship MS dietetic interns and the curiosity they brought to Scott about raising produce.

Then we had a scrumptious lunch with local foods at @merchantsonmass 🫶🏻

Harvest is go time for farmers✨

But this part of the state has had a lot of rain and isn’t harvesting right now, so we ended day one climbing into the combine and grain cart, stepping into fields, and talking to farmers to experience the first day of fall on the farm🍂

From opening soybean pods and tasting the beans, taking a roll in the grain cart with our 13-year-old driver, climbing a grain bin and going inside an empty one. There was a lot to experience!

Seeing harvest happen in the movies or from the highway is one thing, but getting up close and actually seeing and touching the equipment- well that’s better! From the technology and scale of equipment, the challenges, the family matters and more.

Thankful to have some remarkable farmers to talk challenges and excitement happening in agriculture!

Here’s to the @kstatehhs and @kumcdieteticinternship MS dietetic interns and our farmers. This tour is powered by the farmers and ranchers at @ksfarmbureau @kspork and @kssoybean 🌱🎉

Pesticides, fertilizers, seed treatments and more💪

We enjoyed our time at Pederson Seeds learning all that goes into raising a crop. Dietitians help humans figure out what’s best for them to eat in a balanced way.

Similarly, farmers and agronomists write prescriptions for fields with soil testing, yield mapping, technology advancements and more.

We talked plant growth, how pesticides are used, seed treatments, all the decisions that go into growing a field of soybeans or corn, but also all the training, learning and knowledge that goes with it.

There’s a lot of research in every seed and every decision made on a farm and farmers have to juggle it all. Thankfully, they have resources!

Thanks to @pedersonseed for hosting our tour for MS dietetics students with @kstatehhs and @kumcdieteticinternship made possible by the farmers and ranchers at @ksfarmbureau @kspork and @kssoybean 🌱🎉
