Hegbal Estate, brewed slow. ☕️

Some coffees make you pause after the first sip. This was a little moment with Hegbal Estate by Mindful Coffee Roasters @mindfulcoffeeroaster , brewed on the Origami Dripper.

There’s something special about single-estate coffee. Knowing that the beans come from a particular estate gives you a starting point to explore the character of the coffee, from the influence of its growing environment to the choices made during processing and roasting. Every step shapes what eventually lands in your cup.

And that’s what makes brewing so interesting. The fragrance of freshly ground beans, the first bloom as hot water meets coffee, the changing aromas as the brew develops, and the way the cup opens up as it cools. Each stage offers something to pay attention to.

For me, the real joy lies in getting to know a coffee rather than simply drinking it. How does the aroma change? Where does the acidity sit? Is the sweetness more pronounced as the temperature drops? What lingers on the finish? These little details make every brew a chance to discover something new.

The Origami Dripper adds its own charm to the ritual. Its beautiful pleated design allows you to experiment with different filters and pouring techniques, giving you plenty of room to explore how flow rate and extraction influence the final cup. Equal parts brewing tool and countertop eye candy.

And then there’s the setting. Warm amber light, a quiet corner, glass catching the glow, and nowhere in particular to rush off to. Just a little time spent with coffee, appreciating the process as much as the result.

Somewhere between the first pour and the last sip, the morning starts to feel a little slower.

Good coffee. Good light. No reason to hurry.🤎

Some coffees completely change your perspective of what something can be. This did it for me.

Dark roast, yet so fruity. Brewed on a @hario_official V60-01 (plastic) with @cafec_japan abaca fast flowing filter.

13.5g coffee, 14 clicks on @timemoreproducts C3s
200mL water (1:15 ratio) at 88°C
4 equal pours every 30s, swirling only during the last two pours.

The aroma had orange, citrus explosion with spice hints. The first sip was similar, full of orange and wine. Lovely coffee!
