My weekend diary 💕. What an incredible trip with the most incredible humans. Just 3 years ago this entire part of my career didn’t exist. Things can change quickly. Work hard, surround yourself with kind people who inspire you and most of all, trust and believe in yourself.

I am proud of @shopflavcity and my talent at @eckodigitalmedia. I don’t know what I did to deserve this life, but I do know that there’s never a moment where I don’t appreciate it 🙏🏼.

Thank you @beachesresorts for helping us celebrate. I’ve never seen a more beautiful backdrop❤️🏖️

I woke up today wanting to make jalapeno corn fritters - so that's what I did! Usually already shucked corn is more expensive at the store, but @marianosmarket had them for the same price, so I brought home the already shucked corn - 4 ears for $2!

This makes 14 fritters, 2 fritters per serving. On my WW plan, each fritter is 2 points. I'll have a swipe up in my stories for the WW points on your plan.

2 cups corn cut off the cob (from 4 medium ears)
1 medium jalapeno
2 tablespoons basil, fresh and chopped
1 teaspoon lime juice
1 tablespoon lime zest
1 tablespoon minced garlic
3/4 cup flour
1 teaspoon baking powder
1/3 cup unsweetened almond milk
1/3 cup cheddar cheese
1/2 teaspoon salt
1/4 teaspoon pepper
avocado oil spray for pan frying

Instructions
1. In a large bowl, mix the flour, baking powder, salt, and pepper together. Add in the remaining ingredients and mix just until blended. It will be a thick "batter." I used a 1/4 cup measuring cup for each fritter and got 14 fritters out of this recipe.
2. Heat a skillet with 1/2 teaspoon of oil and avocado oil spray at a time - I was able to make 4 fritters at a time, and added more avocado oil spray between batches. Cook for 3 minutes a side, or until golden.
3. The batter can sit in the fridge for 3 days and you can cook as needed. I tried air frying but they didn't hold together and weren't crispy.

🍅OBLIGATORY SUMMER TOMATO POST 🍅

I made this tomato and Parmesan tart yesterday for a @drizzlekitchen client. The recipe is from @food52 and it’s the perfect way to celebrate summer and heirloom tomatoes! About this time ever my year, people get excited for fall and I stand on my tomato soapbox and plead with them to enjoy the rest of summer and tomato season.

But this year I decided I’m just going to do my own thing and post pictures of tomatoes everyday. You can have your pumpkin spice. I’ll be keeping my heirloom tomatoes. 😊

I have a confession to make. I don't like wedding cake. There - I said it! If I have it at a wedding the first thing I do is scrape off the frosting. It's too sweet on sweet for me. But I love frosting, so go figure!

So I decided to make a barely sweet wedding cake cupcake, so that the balance is perfect with the buttercream frosting, and then topping it with the @safeandfair new wedding cake popcorn was the perfect touch. IT SMELLS AND TASTES EXACTLY LIKE WEDDING CAKE! Sorry I am shouting, but I want to make sure everyone hears me. 😍

This made six cupcakes:

2 tablespoons butter, softened
1/4 cup sugar
1/4 cup Splenda
1/3 cup liquid egg whites
1/4 cup nonfat Greek yogurt
1/2 cup buttermilk
1.5 cups flour
1.5 teaspoons baking powder
pinch of salt
12 tablespoons buttercream frosting
@safeandfair wedding cake drizzle popcorn

Mix the butter, sugar, and splenda together. Add egg whites, yogurt and buttermilk and whip for two minutes. (I just used a fork but you can use a hand mixer if you like). Add in the flour, baking powder and salt and stir just until combined.

Divide batter between 6 muffin tins, and bake at 375 for 13-15 minutes. Let cool before decorating.

This is the perfect dessert for me - not too sweet, but sweet enough. I have a new discount code for Safe & Fair - Bizzy20 saves 20% off your order! Every new product they come out with becomes my favorite - you will love this and all their other clean labels, plant based and free from the Top 9 allergen products.
