Blackened mahi with garlic herb tartar.

Grabbed some frozen mahi from @lowesfoods in Mebane. Of course they were hit with @lavadust Lemonaid rub. Blackened the filets in my medium @hexclad frying pan. Deglazed the pan with more butter and browned some shallots, fresh garlic, and sundried tomatos. Also steamed some fresh baby broccoli, then tossed in olive oil and black pepper.

The tartar was made with @kewpieusa mayo, minced garlic, fresh chopped parsley, and fresh lemon juice.

Quick and easy dinner.

Picked up some sushi grade tuna from @lowesfoods , decided to lightly sear this piece. Crusted with Lemon+AID from @lavadust , this tuna hit the @hexclad for a 15 second sear on each side. Sliced that up with the @zelite.infinity chef knife, and whipped out a @missionfoodsus spinach tortilla. Tossed some Oaxaca cheese from @lachonaus in a @hexclad to melt and get a crust. Fresh avocado, white onion, sliced sweet heat spear from @mtolivepickles , topped with Sriracha mayo from @leekumkeeusa and Aleppo pepper from @cerezpazariusa .

@lavadust Lemon+AID tuna tacos

More wild caught tuna from the homie @jsneed15 , covered with lots of that epic @lavadust Lemon+Aid rub and seared in a @hexclad pan with @filippoberio_us olive oil. Broke out the @victorinoxnorthamerica Granton meat slicer for the cutting.

The tacos were @olemex_labanderita low carb tortillas toasted in the same Hexclad and topped with dill crema, my 'filthy rice', @mtolivepickles
Sweet Heat pickle chips, red onion, fresh cilantro, and Cojita.

Tonights dinner brought to you by @leftbankbutchery , @lavadust , and @blackstoneproducts . Picanha with green beans and beef bacon.

Went down to the butcher shop after work and grabbed a picanha, beef bacon, and some of their chorizo for the freezer. This place is awesome and source their meat locally. Staff is incredible!

I ended up cutting a thin steak and couple corners off the picanha, and packed the rest for the freezer. Quick sear on both sides and the fat cap, easy cook on the beef bacon, and some fresh green beans in the beef fat on the griddle with lots of Lava Dust. 👌

When life gives you LEMON+AID, you make tacos. 🍋

When you've got great friends who share their catch from the summer, you take advantage. This Mahi was treated with loads of Lemon+Aid rub and cooked to about medium. Toasted tortis, some chunky guac, lemon dill crema, pickled red cabbage, diced peppers and onions, Oaxaca cheese, lots of Cholula, and some fresh cilantro.

Smoked picanha, served a 3rd way. I'm proud of myself for not making tacos. Previous two reels show the other ways I served this smoked picanha.

This time it was warming/searikg in oyster sauce from @tylingfoodproducts in the @hexclad pan, along with some Sichuan peppers. The beef was served over a combo of rices with paprika. And lastly, some pan fried asparagus cooked in black truffle oil from @tesori_del_matese that I got from @stevesgardenmkthillsborough , and y'all know I coated heavily with @lavadust 🤌🏻🤌🏻
