Stoked to finally begin to share what @cuongalicious & @bremmyhs and I have been working on. Thanks @goodfoodau
@penelopes.circularquay is finally coming in November… we hope 😬
Truly excited to explore what Australian dining & drinking is & can be, and hopefully make people proud of Eora/Sydney’s culinary identity. At Penelope’s, this is what we’re going to be focused on, through each of our differing POV.

Very proud to be a part of this bunch for @bartenderboxing Sydney 2022.
To see how far we’ve all come in a short space of time swells the heart. 💜
I’m not really one for sharing personal milestones on social media but this journey has been great for me, if you get the opportunity to do this program definitely jump on and rinse it for all it’s worth.
Tonight we’re not just fighting for ourselves but also to raise money for @blackdoginst. Depression is no joke. It’s touched my family and my life plenty. I feel like the hospitality industry is touched by it more than most, much like entertainers and comics, great hospitality requires a depth of humanity and empathy that seems to go hand in hand with depression. Tears of a clown and all that. We have lost far too many people far too soon when they were shining at their brightest. Tonight in particular we’re fighting for one of Sydney’s sons, Benjamin Carlotto. He was a big part of making Sydney’s hospo scene what it was in the early 00’s before spreading his wings and warmth across the globe. Tonight while you enjoy a beverage and the spectacle, please take a moment to reflect on those around you and make sure they know they have your support. Don’t just speak it, show it. Even those you perceive as the strongest, toughest, or most successful.
Finally if you can’t make tonight and this little post has moved you at all, I urge you to pop over to Black Dog Institute and make a donation that’s equivalent to a drink or two. Giving is receiving.
What a journey! I already feel like I’ve won. Special thanks to Seb and the team from @8limbsbondi for the training and support and Raj & Mark from BBO along with all the sponsors for putting it on.

Next Sunday 26th of March come and join @squid_dynamite and I for some tasty drinks as part of the #sydneycocktailfestival @operabarsydney
We’ll be featuring one of the drinks from our latest menu @rosenbaumandfuller celebrating Aussie soft drinks. This is the COTTEE’S, tall and refreshing with a lilli pilli hit. We promise we’ll have you hyped like a kids party on the red stuff.
Then we’re doing a slushie (of course), the ZAPPO VARIANT. Yeah we’ve got jokes too. Grape soda meets gin fun.
We hope to see you then!

What a crew! It’s been a year since the last @starwardwhisky distillery trip, and I might need another year to recover from the belly laughs. An incredible day out to celebrate borders reopening and these legends’ support of the sociable whisky. Until next time, stay well legends and don’t bounce your bags!

@hospolive chats Thursday Sydney time (UTC+10):
10am @sebcostello @brandyboy and myself will talk about our experiences opening and running Australian spirits led venues. If you’ve had the pleasure of chatting with either of these two gents before you know I’ll have trouble getting a quality word in!
2pm @matt_whiley gives us the low down on his many businesses over the years including @scoutldn. He’ll also talk to us about coming to Australia and selling his own take on fruity lexia with some tips and tricks on fermentation for the bar.
This guy doesn’t need a hypeman.
