Meet Les Dames d'Escoffier Charleston, a nonprofit network of women leaders in food, beverage and hospitality.
The chapter was founded by the late Nathalie Dupree, one of the South's great culinary ambassadors and author of 15 cookbooks.
Since 2011 its scholarships have helped women study culinary arts, hospitality, beverage and nutrition.
This year the Dames are supporting Transformation Table and Charleston Wine + Food, and the chapter is accepting new member applications.

Our Cofounder Kathleen has officially passed her Level 1 exam, with a perfect score of 100%, awarded by the Oyster Master Guild. She is well on her way to becoming a true Oyster Sommelier! This was made possible through a scholarship from the local Charleston chapter of Les Dames d’Escoffier. (Thank you so much @lesdameschs !!) Her scholarship also covers levels 2 & 3 and she’s excited to continue her progress in OMG’s dual-track Sommelier and Shucker program! Shoutout to everyone who has made this possible 💕🦪

I don’t have a lot of time these days to stop and post photos of my food. Since making it into the Semifinals of the @carlaphall @favchef competition, things have been moving fast! One of our latest challenges was to create an appetizer that reflects who we are as chefs.

Cooking is deeply personal. It can be rooted in family traditions, culture, heritage, or life experiences. For me, it’s inspired by the places I’ve traveled, the people I’ve cooked for, and the unforgettable flavors I’ve encountered along the way.

As a yacht chef, I’ve spent years cooking from Charleston through the Bahamas and the Caribbean, where the day’s catch often inspires the menu. My clients love Thai food, and being handed a fresh snapper that was swimming just hours before is the kind of inspiration every chef dreams about.

This Thai Coconut Snapper Crudo reflects that journey—combining pristine seafood, vibrant Thai flavors, tropical coconut, and the coastal simplicity that has defined my career. Every ingredient has a purpose, and every bite tells part of my story.

This version features fresh Snapper bathed in a silky Coconut Tiger’s Milk infused with fresh Ginger, Lemongrass, Fish Sauce, Tamari, Cilantro, Tri-colored Peppers, Serrano, and a drizzle of Chili Oil finished with vibrant Passion Fruit Pearls. I had to work with what I had on hand in the Bahamas, but sometimes those limitations inspire the most creative dishes.

More than anything, I’m grateful to these two-families who have trusted me to be part of their vacations. They inspire me every day—not just by bringing me the incredible fish they catch, but by their kindness, appreciation, and the simple act of gathering around the table together. Helping create those memories is why I love what I do.

It doesn’t take much to make me happy. A fresh catch, a thoughtful plate, grateful clients, and the opportunity to share my story through food—that’s everything.

Well…we made it to the Top 5 in Carla Hall’s Favorite Chef competition! What an incredible journey it has already been.
This competition began on June 1, and somehow, thanks to all of you, we’ve made it through five consecutive rounds. I know, I know…it’s a long competition! 😄 But every single vote, every click, and every donation helps support the incredible work of the James Beard Foundation, making this journey about so much more than just a competition.
This experience has been incredibly humbling for so many reasons.
As many of you know, I spend a great deal of my time traveling for work. One of the greatest gifts of this career has been the amazing friendships I’ve made along the way. At the same time, being away so often means deeply missing the friends and community I have back home. I do my best to stay connected with everyone, especially the people who mean so much to me.
That’s why your continued support has touched me more than I can adequately express. Every vote, every share, every encouraging message, and every donation reminds me just how fortunate I am to have such an incredible community behind me.
