Molehiya three ways. First way… Turkish Cypriot! Of course :)

Molehiya is not to be confused with “gömeç”
or “moloshes” which is another type of mallow leaf prepared differently. Side note I LOVE garlicky göneç DOUSED in olive oil and lemon. But that’s for another day.

Molehiya is an Egyptian national plant that grows along the banks of the River Nile, - most likely introduced to us by our Levantine neighbours due to proximity and cultural similarity.

Egypt, Syria, Lebanon, Palestine, Tunis and more all have unique variations which BLEW MY MIND when I tried the Tunisian dip-like version versus the Egyptian stew-version.

Ours is a basic, meaty, brothy, tangy dish that maintains the structure of the whole leaf, with plenty of LEMON and served with a side of pilav. I added roasted bone marrow and its oil and have to say that this 10/10 dish quickly became 11/10.

Recipe in the comments…

During the month of Ramadan, we feel more than ever how hunger affects our daily lives. Low energy levels, being thirsty, and having an empty stomach—all these become apparent to us and show us how blessed we are to have an iftar to break our hunger. Thousands of children around the world have this feeling in the pit of their stomach daily, yet their hunger doesn’t only last from sunrise to sunset; it’s a struggle they face every day.

This Ramadan, join me on the Ramadan Challenge with Charity Right, joining a global community taking a step to a healthier and more active Ramadan to raise funds to provide meals to children in some of the most vulnerable countries impacted by conflict.
Let’s unite and become a beacon of hope by supporting Charity Right’s effort as they support children in the distressing situations.
Charity Right supports children through it’s school meals programme. This is a critical need, as it not only provides them with the sustenance they need to stay healthy, but it also incentivises parents to send their children to school, giving them a chance to escape the cycle of poverty.
Remember, this project is Zakat eligible, and your donation can make a big impact:
Thank you for your support. Let’s make The Ramadan Challenge a massive success!
