The existential brisket is alive and well… in Wylie. When I first moved back to Texas, the primary reason wasn't homesickness. It was gastronomical. I was born and raised in Texas and briefly moved up to NYC after graduating as part of Rockwall-Heath High School's first class to attend all four years. One morning up there, I woke up craving barbecue. I made the pilgrimage to Dallas BBQ in Times Square and walked out with a pit in my stomach. I knew I had to move home, and it only took a couple months! When I moved to Austin later that year, Franklin hadn't yet opened its brick-and-mortar restaurant. In nearly 17 years in Austin, I've tried some of Texas barbecue's biggest names before they were crowned kings, and became kingmakers themselves. I'd comfortably place Linke's BBQ right up at the top of that shortlist. One of my favorite barbecue spots of all time, the beloved Ruby's BBQ (that's Ruby's with a B, not Rudy's!), has been gone for nearly a decade. Yesterday at Linke's BBQ, they gave Ruby's brisket, once deemed "the existential brisket," a run for its money. It was juicier and the bark was more flavorful. That's not a side-by-side comparison, of course. Linke's was competing against one of my fondest memories of brisket. That's a harder contest to win. And it won. Their ribs couldn't have been more perfect and slid right off the bone. There are two schools of thought here: in Central Texas, folks favor a "clean bite," where your teeth leave their mark and the remaining meat stays on the bone. North Texas folks love it falling off. Clint's originally from South and Central Texas, but has embraced that regional preference. I'm happy to side with North Texas on this one too, and you can see my Mom agrees. I'm not a fella who tries a lot of chicken and pork at a barbecue restaurant, but the offerings at Linke's BBQ may have made me rethink that position permanently. Their sides all pull their weight, and their slaw has a kick to it. Go try Linke's BBQ for some of the best BBQ in the Lone Star State.

When the wife ask if I want BBQ I jump and go. Rolled into Wylie, Texas a city over from my home. Destination was Linke's BBQ. When you step in you feel like you have found the gem on the backroads of Texas. Smells good, friendly people and quaint setting. Two of us grabbed sandwiches piled very high with smoked meats. I grabbed Ribs, Turkey and Fatty Brisket myself with peach cobbler and a side of potatoe salad. Damn fine BBQ all-around. I would recommend going and give them a try and get yourself a pile of good BBQ.

In October of 2013 a group of people throughout Central Texas came together to help raise the funds to get this young man an Action Track Chair (an all terrain wheelchair). The goal was to raise $12,600. We raised $36,000 that night. and in 3 months Kolby Harvey received his brand new track chair. What I didn’t know was how all this was about to reshape my life as well. Kolby’s 27 years old now….and still my buddy. He’s now transitioned to a nursing home and I got to visit him a couple weeks ago. But not before our Pal, Clint Linke loaded us up with BBQ to take him. Grateful God put guys like this in my life. Merry Christmas to you All..

We went to @linke_bbq to get some bbq and everything was amazing. We can't wait to comeback for more. Thank you @robertsierrabarbecue for the invite. Our bbq brothers @max.baez.9 , @schmittys.bbq came out and loved it too.

@linke_bbq for lunch and it did not disappoint , made it out with the fellas @texasbbqchapter and what a meal, started out with Range Balls for an appetizer but these can be a meal or a side, Than that brisket with some lean and moist , a slab of pork baby backs, smoked turkey breast , with sides after sides of potato salad, potato casserole, cole slaw , mac n cheese and pinto beans, followed with Grandma Linke's Peach Cobbler with a side of blue bell vanilla ice cream, i will say it was incredible, amazing meal with amazing friends, And Clint and Olin Linke are some of finest people you will meet, If you not that hungry get any meat and you won't be disappointed, but do get you some Range Balls and that Grandma Linke's Peach Cobbler, oh my, i haven't had meat sweats in a long time but here i couldn't stop and i was i'm meat sweat overload , give them a try if you north east Dallas in Wylie Tx. While I am not a professional food critic, I have had the pleasure of savoring some exceptional BBQ over the years. During my visit to this establishment, I ordered the sliced brisket sandwich, and I must say that it was the most tender and delicious brisket I have ever had, hands down.
