Let’s go on a roadtrip? ⛰️🌲🌊💌

Road trips are definitely one of our favorite ways to travel, and stopping along the way to cook a meal or make a fun snack is always one of the best parts.

On this road trip, we made everything from cinnamon rolls and pancakes to s’mores dip, all right on our camp stove! There’s nothing better than finding a pretty spot to pull over and making something good to eat.

This is how vanlifers cook their meals 👀🍝👇🏽

Although we do have a tiny kitchen in our van, turning on the stove on hot days can make our space EVEN hotter, and sometimes we just don’t want to make a whole mess inside.

So, we often prefer to take our kitchen outside!

Thanks to @littlekamper, we can easily bring our camp stove outside and cook wherever we’re at! 🏕️

Fall mornings in the Colorado mountains look a little something like this 🎃🥞🏔️

We made these pumpkin protein chocolate chip pancakes using cottage cheese, flour, pumpkin and a few other simple ingredients for the perfect cozy breakfast outside.

Recipe:
* 1 cup cottage cheese
* 1/2 cup pumpkin puree
* 3 large eggs
* 1 cup flour
* 1/4 cup milk
* 2 tbsp maple syrup
* 1 tsp vanilla extract
* 2 tsps baking powder
* 1 tbsp pumpkin pie spice

Blend cottage cheese, eggs and pumpkin in a blender, mix all ingredients, pour on your pan, sprinkle with mini chocolate chips and enjoy!

Not sure how I pulled that off, but holding down 4th place after day one here at the @bassmaster EQ on Norfork with 14-8.

After a miserable practice, I went out with the goal of simply bringing in 5 today, but the good lord blessed me with a couple big bites late in the day.

Hopefully I can keep it rolling at the same pace and slide into that championship Friday cut!!
