October is here, which means we’re kicking off our fall recipe series with some of our favorite seasonal recipes, cozy bites, and plenty of ideas for your game day spread. 🍂🏈

First up: this Pumpkin-Shaped Bacon Jam Cheese Ball. 🎃🥓 Bring it to the party and don’t expect leftovers.

- 16 oz full-fat cream cheese
- ¼ cup full-fat sour cream
- 12+ oz sharp cheddar cheese, shredded
- 1 ranch seasoning packet
- 3+ Tbsp Midwest Fresh Bacon Jam
- Kosher salt + black pepper to taste
- 1 bell pepper stem for the finishing touch

Ingredients:

1 package Gnocchi
4 Tbsp butter
1 Tbsp minced garlic
1 spring of fresh thyme
1 hatch chile, grated
2 oz Parmesan cheese

Hatch Cheddar Cheese Biscuits are ALWAYS a good idea!

@livefireaaron shows us how easy it is to make these. Brunch anyone?

Ingredients:
1 cup all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp seasoning salt
1/4 tsp kosher salt
4 tbsp cold butter
1/2 cup (2oz) grated cheddar cheese
1 fresh Hatch Pepper, grated
1/2 cup whole milk, plus a little more for brushing

dEATs:
1. Preheat oven to 450 degrees and line a baking sheet with parchment paper
2. In a large bowl, stir together flour, baking powder, seasoning salt and kosher salt.
3. Use a box grater to grate the butter into the bowl with the dry ingredients. Use fingers to toss the butter into flour, then pinch it together until the mixture has a crumbly consistency.
4. Stir in grated cheese and the hatch pepper. If the hatch is too watery, squeeze the access liquid before adding to the bowl.
5. Stir in 1/2 cup whole milk until a soft, slightly sticky dough forms. Do not over mix.
6. Use a cookie scoop or a 1/4 cup measuring cup, filling it three quarters full, scoop mixture onto parchment paper.
7. Lightly brush tops of biscuits with the leftover whole milk
8. Bake for 12-15 min, or until tops are golden-brown and crisp and the centers are tender and fluffy.
9. Serve warm. For an extra savory finish, brush the finished biscuits with melted butter and and a small pinch of seasoning salt

Behind the scenes at Memphis in May 🔥
 We take the turkey seriously… everything else? Not so much 😂
 Just good people, good laughs, and a whole lot of smoke.

Got to spend the week at the legendary Memphis in May cooking at the Open Fire Meat Up with the crew from Bear & Burton’s and it was one for the books.

We cooked over an absolute beast of an open fire table from TMG Pits and burned through just about every product Jealous Devil makes. Lump, wood, fire starters… if it made fire hotter or food taste better, we probably used it.

The beef was unreal. The Plainville Farms turkey showed out too and proved once again turkey deserves a seat at the grown folks table.

Best part of the whole week though was getting to cook and laugh alongside Alicia, Jenn, Tim, Scott, and Aaron. Long days, smoky clothes, fire management, meat sweats, and enough stories to probably get us banned from at least one campground.

That’s the kind of week you don’t forget. Fire, food, friends, and a whole lot of memories made around the pit.
