Sustainability is something I think about when I host Infused Table, but I don’t really think of it as a separate “thing” I do.

A lot of it is just being intentional — using what I already have, reusing things, keeping food waste low, choosing seasonal ingredients when I can, and supporting small businesses I love.

And of course, the whole table is vegan. 🌱

None of this is perfect, and I’m definitely not trying to make hosting perfectly sustainable. I just try to make thoughtful choices where I can.

These are some of the little things that have become part of how I host. ❤️

What a blessing it was to host not one, but **TWO Onam supper clubs this year** 🥹💚

For my first one, we went all in with a proper vegan Onam Sadya completely home-cooked, and served traditionally on a banana leaf.

Here’s everything that was on the menu :

🍌 Small banana
🍌 Banana chips
🥟 Pappadam
🥙 Parippu vada
🥭 Mango pickle
🍋 Lime pickle
🌶️ Inji puli
🍅 Tomato pachadi
🌱 Okra kichadi
💗 Beetroot kichadi
🥬 Cabbage thoran
🫛 Beans thoran
🥔 Potato fry
🥕 Aviyal
🥥 Oolan
🥣 Pulisseri
🍛 Sambar
🥥 Kootu curry
🍚 Rice
🌶️ Rasam
🍮 Semiya payasam
🌾 Millet payasam
🥛 Sambharam

And yes, **every single thing was vegan and fully home-cooked.** 🌱

I’ve been celebrating and hosting Onam for years, but getting to open up my home and share a piece of my culture, food and childhood feels like such a gift.

The chatter, laughter, second servings, full bellies and happy faces… honestly, this is why I host. 💚

And the fact that I got to do it **not once, but twice this year**? What a blessing. 🥹

Onam is a South Indian harvest festival that lasts for 10 days. This past weekend, my friend @spices.and.spoons Priya hosted a Onam Sadya (feast) with family, friends and new connections to showcase a flavor of Kerala in Atlanta. We ate on a traditional banana leaf (which I love) and savored on many Kerala dishes with flavors ranging from sweet, spice, sour to tangy.

I always love when my worlds collide to see so many friends (and fellow food bloggers) come together to support another: @peachy_palate @lalladidance @vaishu_gomadam @kaushik52 @mythili.iyengar16 @shayownit_ and the one time a year I wear a veshti/dothi/mundu/lungi (the long sarong like draping for men). Thank you for new memories and a creative way to celebrate an Indian festival @spices.and.spoons and @lknalyssa for the captures.

Priya is hosting another one layer this month as part of her Infused Table supper club series so if you missed out on this, keep a watch for future events.
