Salvadoran food has BEEN evolving. You’re just starting to notice. 🇸🇻

For the past five years, I’ve had the privilege of documenting Salvadoran food alongside my friend Eric Valle, aka El Terrible.

We’ve eaten the traditional stuff we grew up with. We’ve documented pupusa donuts, birria pupusas and chefs completely reimagining what Salvadoran food can look like. We visited Popoca in Oakland before its Michelin recognition. We’ve documented Walking Spanish’s journey in L.A. And through Salvi Food Tour, I’ve traveled between California and El Salvador trying to understand where our food has been—and where it’s going.

So seeing chefs like Jimmy Reyes of Leña receive larger media attention genuinely makes me happy.

Because this movement didn’t appear overnight.

There are Salvadoran chefs cooking in fine-dining kitchens, parking lots, pop-ups and restaurants across California who have been doing this work for years.

And there are Salvadoran writers, filmmakers and storytellers who have been documenting it too.

Eric and I sometimes call it the Salvi Renaissance on a plate. Eric has another name for it: alta cocina salvadoreña.

Whatever you call it, something is happening.

And after years of self-financing documentaries, carrying cameras into kitchens and asking people to trust me with their stories, I’m ready to share a lot more of what I’ve been documenting.

In the latest edition of L.A. Omnivore, @longdrivesouth discusses a recent dinner at the pop-up Leña @lena.los.angeles, by chef Jimmy Reyes, and poses a question: Why doesn't Los Angeles have an upscale modern Salvadoran restaurant similar to Popoca in Oakland?

Cookbook author Karla Tatiana Vasquez @salvisoul points out that opportunities for Central Americans still remain limited in L.A.

@nativefieldsla in the city of Walnut Ca is one of my favorite restaurants in the SGV. My go-to on the menu is the French Toast and the Ricotta pancakes. Her French toast is a huge slice of brioche, topped with fresh berries and whipped cream with sprinkles of almonds. The Ricotta pancakes are topped blueberries, fruit and some créme fraiche. My wife always gets her favorite, the plate. The food here is incredible and and always made fresh. I'm always going to recommend this spot if you're in the area. Thank you @cattyboombatty for sticking to your mission and making the most delicious food.
