One of my favourite meals last night...Cod Puttanesca...what a beautiful combination of flavours this is 👌

Pan fry some thinly sliced carrots with crushed garlic and chopped anchovies in @morocco.gold olive oil...

Add the most delightful tinned cherry tomatoes from @muttipomodorouk as well as some capers, black olives, chilli flakes, butter beans and fresh rosemary, thank you @rg.fresh 😁

Simmer for a minute then nestle a couple of bits of beautiful Cod, I used these gorgeous ones I was kindly sent from @bradleys.fish , into the sauce and transfer your pan into the oven at 190°c for 15 mins...on dishes like this my favourite pan from @samuelgrovesgb comes into its element where it can go from stove top to the oven, love it...

When your ready this dish is best served with some crusty bread and a few glasses of merlot 🍷😋 what more can I say ...

Have a great weekend insta world, big love to all 💙💛💙💛💙

■"FINAL RECIPE OF NO-BAKE CHEESECAKE RECIPE"

STEP 2:
MAKING OF CRUST: (BOTTOM LAYER)
●By using a food processor/ mixer, grind the 150 gm of biscuits (used Britannia marigold biscuits) into crumbs. Pour into a medium bowl & add melted butter, mix well until combined. Mixture will be sandy.
●Take any cocktail glass or glass available with you and press the sandy mixture firmly into the bottom. I used a steel spoon to pack the crust down tightly.
●Allow crust to slightly cool as you prepare the filling.

MAKING OF FILLING:
●Take 1 cup of country cheese/ cheena and blended it in a mixer to get smooth paste.  Beated the blended cheese with 2 tablespoons of thick curd & 1 tsp milk, sugar as required and pinch of salt on medium-high speed until the mixture is smooth & creamy, about 2 minutes.
●Divide the cheesecake batter in 2 bowls.
●Add 2 tsp syrup of jamun compote prepared(recipe shared in the previous post) in one bowl & mix well.
Add 1tsp of vanilla essence in other bowl & mix well.
●Take 2 tsp of agar agar in a bowl and add hot water to dissolve it, then add this to the plain vanilla cheesecake batter.
●Take out the cocktail glasses from fridge and pour the plain cheesecake batter 1st & fill half of the glass.
●Keep it in freezer for 15-20 mins to set properly.
●Again take 2 tsp of agar agar in a bowl and add hot water to dissolve it, then add this to the jamun infused cheesecake batter.
●Next pour the jamun infused cheesecake batter and add few drops of jamun compote syrup, then with help of a clean toothpick make ur desired patterns.
●Garnished with a local jamun & mint leaf.
Then refrigerate it for at least 4 hours or overnight.

My mom's best indian dessert is semiya kheer or payasam or vermicelli milk pudding whichever one you call it.
This is probably the only recipe I nail. I love it and surprisingly so does Avi (who doesn't even like food, yes he is my own flesh and blood, you would wonder!)
This simple recipe I'm penning down for my future reference.
#recipe
1 cup vermicelli
1/2 sooji/ semolina
750 ml milk or more of too thick
1/2 cup plus 2 tbsp sugar
1/4 tsp salt
2or 3 cardamom
Ghee
Dry fruit and nuts
Fry the dry fruit in ghee, set aside, Roast the vermicelli and sooji in the left over ghee, add more of needed, then add milk and sugar, cardamom and cook till vermicelli is cooked, add the dry fruit and nuts. It's that simple.

▪︎So in my previous you must have got an idea about how to use tender mango leaves to prepare a delicious chutney,
whereas matured one can be boiled in water to make a decoction which can be consume as a refreshing tea(Mango leaves tea).
▪︎But the same principle can be used for flavorings your dals with aroma of a raw mango.
▪︎You can check out Deepa Mam @paticheri insta page for a delicious rasam recipe (igtv video) from mango leaves.
▪︎I used some tender leaves & matured leaves to make a mango flavored dal. Matured leaves can be removed after cooking. I have used few pieces of raw mango for sour taste since it was available in the season.

RECIPE OF AMBA PATRA DALI (Mango Leaves Dal):
●Clean the 4 tender mango leaves and 2 matured mango leaves.
●Soak 2 handful of red gram(Arhar Dal).
●Heat a pressure cooker and add 1 tablespoon oil.
●Add little hing, 2 teaspoon of mustard seeds, 1 dried red chilli and saute for a minute in medium flame.
●Add the soaked dal & mango leaves, 3 green mango pieces, half tsp sugar, add salt to taste and turmeric.
●Add 1 & half cup water & close the lid of the pressure cooker. Wait till 2 whistles.
●After the pressure is released, open the lid & mix well everything.

Serve your dal with hot steamed rice.

▪︎So in my last post I shared some facts & myths about Indian borage aka "Rukuna hata pocha" in Odia.
▪︎As I mentioned earlier, @pulpycreations 1st introduced my family a chutney made from this aromatic leaf.
▪︎Though Mama( Mother) didn't liked it that much so I never tried to source it.
▪︎Coincidentally another tenant in our premises planted this aromatic plant.
When I asked her for few leaves to cook, she happily allowed me to take some fresh leaves.
▪︎Today I made some chutney inspired from @lubu.mohanty & for us it was meatless Sunday today.
So cooked a meat analogue
which is a texturized vegetable protein (TVP) i.e SOYA CHUNKS.
It is not only quick to cook, but also high protein content comparable to certain meats.
▪︎I believe almost all of us are fooled by our mothers during our childhood days saying this curry as a meat curry.

RECIPE OF RUKUNA HATA POCHA PATRA CHATANI: ( Indian borage chutney)
● Clean a bunch of fresh leaves.
● Now in a mixer grinder, add all leaves, add 1 green chilli, 3-4 pods of garlic, 1 teaspoon tamarind starch & 1 dried red chilli and make a fine paste.
●Now add salt to taste & sugar as required according to your taste bud.
Mix it all well.

RECIPE OF SOYABEAN BADI ALU TARKARI: (Soya chunks potato curry)
■Boil the soya chunks with salt and 1 tablespoons oil.
■ Once they doubled in size by absorbing moisture, turn of the gas & cool it down. Then squeeze out the excess water & keep it aside along with boiled potatoes.
■ Heat a cooking pan & add 2 tablespoon mustard oil.
Add 1 bay leaves, pinch of asafoeitida(hing), 1 medium sized chopped onion then saute till it turns light brown.
■Add a paste of small piece of ginger- 1onion-4-5 pods of garlic-1dried red chilli.
Saute it all well till the raw smell disappears & add 1 tablespoon coriander & 1 teaspoon cumin powder, salt to taste, turmeric.
Add 2 small chopped tomato when the oil starts separating out.
■Saute it till the tomatoes become soft, add the soya chunks & potatoes, then mix well & saute it for 2 mins.
■ Add 2 cup water to it and mix it all well. Add pinch of sugar & salt if required.
