Dispatches from Maaemo

POSTS STORIES REELS TAGGED

@maaemo had been on my list for years. I’ve long admired @esbennmedb approach to food and design, so our long-awaited visit to Oslo felt like the perfect opportunity to visit the restaurant at last.

The evening lived up to the anticipation that had built over the years. Among the many memorable dishes, the oyster, the giant scallop with grilled peas, and the trout were particularly outstanding.

I’m so glad we finally had the opportunity to visit. My sincere thanks to the entire Maaemo team for such a memorable experience.

Maaemo*** - Oslo.

#maaemo #achefabroad #oslofood #michelin #foodtravel

An afternoon at MUNCH or a performance at the Oslo Opera House gives you plenty to discuss over dinner. And Oslo has restaurants that deserve time of their own.

These five take different approaches to the meal, with cooking that can be precise, playful or both. After an exhibition or a performance, there’s something particularly nice about sitting down to see what another creative mind has made.

Which of these Michelin Star restaurant would you book for the evening?

The most memorable bread I’ve ever had 🥖🥐🤯

Reliving the 100 Best Bites of my life (so far): no. 1️⃣9️⃣

I had one of the best meals of my life at @maaemo in Oslo. In their sleek new location, a dark and intimate design creates a truly unique atmosphere. The food is deeply personal, rooted in chef @esbennmedb’s experiences and the incredible local produce of Norway.

While many courses were exceptional, the bread course stole the show: this laminated bread was simply perfect!

First, the texture: crisp yet soft, with countless layers of buttery, melt-in-your-mouth dough. Then the flavour: an intense combination of fermented honey, salted lamb leg, dried mushroom and lavender.

Absolutely mind-boggling.

Meal number two on the Best of Scandinavia tour last night, and after Frantzén the evening before, @maaemo had a pretty serious act to follow.
Chef-owner Esben Holmboe Bang opened Maaemo in Oslo in 2010. It gained two Michelin stars in 2012 and, in 2016, became the first restaurant in Norway to be awarded three. The restaurant moved to its current home in Bjørvika in 2020.
The dining room is stunning. Huge, dramatic, beautifully lit, with an open kitchen and artwork throughout. One of the most striking features is the wall of hanging wool at the back of the room, made from offcuts left over from the production of Norway’s traditional bunad folk costumes. A brilliant detail and very much in keeping with Maaemo’s identity.
Despite the scale of the room, the service was warm, friendly and completely relaxed from start to finish.
The food was exceptional. Esben’s cooking is deeply rooted in Norway and its produce, but never feels forced. The langoustine was probably my standout dish of the night — absolutely superb.
And a special mention for the wine list. We drank exceptionally well by the bottle, with some seriously good choices and very fair pricing for this level of restaurant.
After such a brilliant first night at Frantzén, I genuinely wondered whether anything could follow it.

Maaemo was right up there.

Two meals into the tour and the standard is incredibly.
