Thick-cut MAKE Matcha French Toast.

Shokupan, soaked in a matcha custard made with MAKE @makematcha.co, griddled in butter until the edges go crisp. On top: ceremonial-grade matcha, matcha ice cream, azuki whipped butter, toasted almonds, and kuromitsu.

It's new on the menu, and it's the one to order when you're sitting down.

Dine-in at Davelle, from 11 AM. 102 Suffolk St.

Imperial Matcha Pudding.

Silky matcha pudding made with premium matcha, milk and cream, finished with a glaze of Imperial grade matcha by MAKE @makematcha.co and kuromame sweet black beans.

Imperial is MAKE's organic matcha from Kagoshima — first-harvest spring leaves, shaded before they're picked, stone-milled, selected by a 10-Dan tea master. You taste the difference: deeper umami, a cleaner finish, none of the bitterness people expect from matcha.

Have it at the table at Davelle, or grab one from the case at Davelle Ya and take it with you. 102 Suffolk St.

Matcha by MAKE @makematcha.co.

Matcha is everywhere right now. It is not all the same. Where it grows, which cultivar, when it's picked and who selects the leaves decide the color, the umami and the finish. MAKE is blended by Hiroshi Kobayashi, fifth-generation head of Shogyokuen in Kyoto, a tea house founded in 1827 — one of about thirty people in Japan who hold 10-Dan, the highest rank in tea appraisal. First-harvest spring leaves, shaded before picking, stone-milled to powder, from small farms MAKE has worked with for years.

At Davelle: the Matcha Latte and Matcha Yuzu Lemonade on Ceremonial grade, the Imperial Matcha on its own, the Hojicha Latte, and the thick-cut MAKE Matcha French Toast. Take a tin home from the shelf at Davelle Ya.

Today’s mood: something green. 🌿

A freshly made matcha in hand, avocado toast on the table, and nowhere to be but Babblers Bakery. Settle into a cozy seat, take your time between sips and bites, and ease into another beautiful morning in the Catskills.

Fresh flavors, slow mornings, and a little green goodness to start the day. 🍵🥑
