Thanks to the lovely folks over at @melbfoodandwine for having me on their "How I Melbourne" regular.. I totally blew through the word count/requirements and waxed lyrical about all my favourite places. Head to the MFWF website to read all about it. Been nice how many people read EDM's and saw the piece. Thanks to @ashleyludkin taking a photo of me while making pizzas at my birthday party with the greatest camera in the world (the Contax T3.. i miss mine so much.. where did i leave it?).

Shadow Blossom is the cheese that proves “pretty” and “powerful” can absolutely coexist. Washed in a botanical brine layered with Kampot pepper, Madagascar Pepper, Tailed Long Peppercorn, Cardamom and Pink Peppercorn it develops a rind that blooms with color and character.

As the wheel ages, those aromatics mingle with the paste, creating a soft, silky texture and a flavor arc that moves from gentle florals to savory complexity. It’s a modern riff on old‑world rind‑washing traditions — where makers used spice, botanicals, and local herbs to protect and perfume their cheeses during aging.

Shadow Blossom is a reminder that cheese isn’t just food; it’s craft, history, and imagination wrapped in one beautiful rind.

Come and see us this weekend! We’ll be at Lancefield Farmers Market on Saturday, and Flemington Farmers Market and Heathmont Farmers Market on Sunday.
We will have our full range of soft, tangy Silver Wattle, rich, gooey Driftwood, firm, savoury Granite, nutty, earthy Banksia, firm, nutty Ironbark, and the creamy, gentle blue we call Bluestone. It’s also good chance to pick up our Botonia- fromage frais with garlic and herbs, available only at markets and our Cheese Shop at The Mill in Castlemaine.
You can find our other cheeses at hardworking cheesemongers and cheese-loving retailers across the country. Stock up for the festival of footy! Big hello to @littlesisterdelicatessen in Freo and @lefromageyard and @thecheeseboardcave in Bris.

Delicious and easy to make at home…

- DARK RYE TOASTS WITH @lacuriosa.es MUSSELS IN SPICY ESCABECHE, @perellofoods GORDAL OLIVE & RICOTTA -

INGREDIENTS (Serves 3–4 snack toasts)

* 1 tin La Curiosa Mussels in Spicy Escabeche
* 1 x 150 g can Perelló Gordal Olives, 4–5 olives
* 100 g ricotta
* 1 large slice dark rye sourdough (toasted)
* Sea salt flakes, to taste
* Cracked black pepper, to finish

METHOD

1. Prepare the ingredients
Open the tin of mussels and drain the escabeche marinade into a small bowl. Keep it aside to dress the toasts when plating.

Open the can of olives and roughly dice 4–5 olives. Keep the remaining olives and brine aside.

2. Prepare the spread
In a medium bowl, add the diced olives and ricotta. Mix together, then add a small pinch of sea salt flakes.Continue mixing until smooth and well combined.

3. Plating
Cut the toasted dark rye into 3–4 pieces.

Whisk the reserved mussel marinade and lightly dress each toast with it.

Spread the olive and ricotta mixture generously over the toast, then place 3 mussels on top of each piece.

Finish with freshly cracked black pepper.

TIP

The olive brine and remaining Gordal olives are perfect for making a great Dirty Martini, or simply for snacking on the side with friends.

Stracciatella airfreighted from Puglia with last of the season celery and oven roasted olives.

Lovely with our guanciale on toast. It has lots of honey, a rub of garlic and some fresh thyme. We serve it with saucisson and guindilla.
