Join me in honoring Shavuot with the “Shavuot of Longing” Cookbook project. Here is a special recipe inspired by Shlomo Mantzur’s favorite food, no-bake cheesecake. Not long ago, I visited his wife, Mazel, who told us how much she loved her husband and what a special man he is. She also shared that he loved pistachio ice cream. Shlomo, the man with golden hands, is one of the founders of Kibbutz Kisufim. A father of five and grandfather to twelve, he loves working in his carpentry shop, crafting and fixing things. He has worked in all branches of the kibbutz’s industries, always with a winning smile on his face. Shlomo is a man of action with a huge heart. In the Israeli movie “Mivtza Savta,” a character based on him is depicted in one of the scenes.

Today I visited his cousins to celebrate his life, and we made this cheesecake together. I chose to honor Shlomo because he reminds me so much of my own family. Shlomo has been held captive in Gaza for 227 days!
