This is trial at least 500. Spanish bomba rice + Indian Pusa 1121 basmati (developed by Dr. Vijaipal Singh) both of which are highly absorbent, fluffy yet not sticky. Both contain at least 20% amylose, enabling full colonization, and maximum matting. This is the standard now, can’t go back. #stack #kojinception #shortgrain #longgrain #goldilocks

Used @kojiyasanzaemon @kojiya29th bio’c oryzae. Best koji genetics on the planet of earth.

Bradford Pear trees typically flower around April Fools’ Day here, which is the level of trollery I aspire to one day reach. Alas, I already caught a whiff. Happy something or other, y’all!

Thought it would be fun to ferment Fuyu persimmons with wild persimmons. Not sure exactly what the plan is, but the flavors are already on point.

*** “Merde Vert” is the name of a really flavorful green chili hot sauce that i added some green yuzu oleo saccharum to tame it back a bit.

Hello! I’ve been keeping very busy in the lab lately, here today we have one of the most refined creations, JUNO SOSPITA. A classic 3.5/10 heat level with summery Italian-inspired flavors, underpinned by green elderberry capers from @mallorylodonnell and fiddlehead ferns sourced by the champs over at @billysbotanicals . Scoop a bottle from the website, and make sure you join the email list for a discount (signup in my story highlight). See you online or in the sunshine!

Harbinger of the end of Summer: kudzu blossoms. If the wind changes direction and you catch a whiff of something reminiscent of grape jelly, this is the culprit. Has long been used to make a “grape” jelly or jam by the hillpeople of Appalachia. Am going to see what happens when i put the blossoms through the kojisphere. :)

Orange and Semolina Cake
with Pressed Yogurt and Almonds

Semolina with pressed dahi or labneh, almonds, and orange. Unlike versions that use eggs or olive oil, this recipe relies on yogurt for richness and structure, with plant-based options possible but not really recommended. Syrup can be added after baking, though the cake also stands on its own. The syrup balances flavor without overwhelming it with sweetness.

The syrup also gives the impression of natural sweetness. It’s far tarter, and not cloying. If used, it should be salted lightly to prevent mold growth when stored, and of course to balance out the tastes.

Extra orange parts can be used for other recipes such as an orange tarte tatin - soon come - making this a no-waste preparation.
