⏱ Baking: 180°C | 65 to 80 minutes

🥣 INGREDIENTS:

🥛 Starter:
20 g Lievito Madre
120 g milk
70 g flour
10 g sugar

🎃 Cake batter:
600 g thick pumpkin purée
4 eggs
200 g soft margarine or butter
150 g sugar
20 g vanilla sugar
530 g flour
20 g cocoa powder
10 g baking powder
150 g dark chocolate
½ tsp salt
1 tsp cinnamon
zest of 1 lemon

🥫 Filling:
370 to 400 g dulce de leche
30 to 40 g milk

👩‍🍳 METHOD:

1️⃣ Starter and pumpkin purée

Roast the pumpkin at 200°C and blend until you get a very thick purée. Mix the starter ingredients and leave in a warm place for 45 to 90 minutes.

2️⃣ Make the batter

Beat the margarine with the sugar, vanilla sugar and lemon zest for 4 to 5 minutes. Add the eggs one at a time, then add the pumpkin purée, melted chocolate, starter and the dry ingredients. Let the batter rest for 20 minutes.

3️⃣ Layer it

Add to the pan in layers:

⅓ of the batter ➡️ half of the dulce de leche ➡️ ⅓ of the batter ➡️ the remaining dulce de leche ➡️ the remaining batter

4️⃣ Bake

Let the cake rest for 1 to 2 hours. Bake at 180°C for about 65 to 80 minutes. Cool completely on a wire rack.

💡 THE SECRET

Your pumpkin purée needs to be very thick, and the margarine or butter must be whipped really well. That is what makes this cake incredibly fluffy and tender 🔥
