CALVADOS PUNCH

@avallenspirits calvados, falernum, fermented berry & acid adjusted apple

For us, this drink was about exploring a flavour map. Finding similarities between ingredients, utilising relatable ingredients and bringing them together in a way that just makes sense

Precision is everything with this one. Too much of any single ingredient and the entire drink takes a different direction.

Fruity but tangy, something that really gets the palate thinking.

Truffle button

- Chairman’s reserve
- Crème de cacao
- Amontillado sherry
- Black truffle & cacao tincture
- Orange bitters
- Saline

White chocolate button garnish

A unpublished throwback from my time at @goodthings.xyz , super weird but somehow works super well, sweet, slightly nutty and funkiness from the black truffle but smoothness from the chocolate and sherry.

The Pickle Rickey

Espolòn Reposado Tequila - Avallen Calvados - Apple - Pickle - Green Strawberry

Refreshing, fruity and tangy, this drink comes to us from Nowhere. It started as a complete experiment with pickle juice, appletiser and tequila: three flavours that absolutely shouldn't work together, but just do!

At FAIR, curiosity has always taken us to new places, new cultures and new flavours, and baobab felt like a natural next stop. Bright and tangy, FAIR Baobab Liqueurs layers citrus, honey and tropical fruit notes into something a little unexpected for the bar. Just how we like it.

💥 Rhum J.M Millésime 1987 💥

We were lucky enough to taste this beauty at @laboutiquedurhumparis back in April during our @rhumfestparis weekend.

Single‑vintage J.M from the 80s is rare, and this was a first for us. Distilled in 1987, aged 10 years in carefully selected barrels under Martinique’s tropical heat, and wrapped in that iconic artwork… it’s a bottle with presence. And with bottles sitting around €1600, it’s not something you casually bump into.

So after all that build‑up… was it any good?

Absolutely. What blew us away was how clearly it still speaks agricole. Long ageing can sometimes push barrel notes so far forward that cane juice and molasses start tasting closer together. Not here. Alongside the deeper barrel tones (raisin, leather, toffee, chocolate) you still get those bright, green cane‑juice notes: loads of apple and pear especially.

A brilliant experience, and one we were genuinely grateful for 😎🥃

We must say a big thank you to @tomribler and @laboutiquedurhumparis for the guidance in the shop and for picking out this absolute stunner for us to try.

MARGARITA RUMBLE: MEET THE TEAM!

Huge shoutout to the crew who brought Cabana to the Margarita Rumble today at Two More Years, Hackney Wick.

Jose, Cristina, Johnny, Cece, and Rich — mixing, hustling, and repping Cabana all day long. And a special guest star appearance from Joana, who jumped in and joined the fun.

This is what Team Cabana looks like when it shows up.
