Sweet Thai Chili Cauliflower Burger Bowl 🍚🌶️
Servings: 2 bowls
Prep time: 10 minutes
Cook time: 25 minutes
Total time: 35 minutes

Ingredients:
-1 cup basmati rice
-1 (13.5 ounce) can coconut milk
-1 Dr. Praeger’s Crunchy Cauliflower Burger
-1 cup chopped red cabbage
-1/2 cup matchstick carrots
-1 tablespoon lime juice
-1 teaspoon soy sauce
-1 teaspoon honey
-1/4 cup mayonnaise or Greek Yogurt
-2 tablespoons sweet chili Thai sauce

Method:
-Add the rice and coconut milk to a small pot and stir to combine. Bring to a boil, then turn the heat all the way down to low, cover, and cook for 20 minutes until all of the liquid is absorbed. Fluff with a fork before serving.
-Meanwhile, cook the Cauliflower Burger with your preferred method, according to the directions on the box (this recipe works great in the air fryer!).
-Make a simple slaw by adding the chopped cabbage, matchstick carrots, lime juice, soy sauce, and honey to a bowl and stirring to combine.
-Make your finishing sauce by whisking the mayonnaise (or Greek Yogurt) and sweet chili Thai sauce. If it seems too thick, you can thin it out with up to 1 tablespoon of water.
-Once all of your elements are ready, assemble your bowls with a bed of coconut rice, topped with the slaw, Crunchy Cauliflower Burger, and finished with the sauce. Enjoy! 😊
